Glazed Apple Puff Pancakes

(a.k.a Heaven On A Plate) This morning I decided to start the morning off right and I guess you can say it paid off with all the excitement that surrounded the table as I was taking the pictures to share with you guys.  Before they could even taste it, Allan deemed this dish Heaven on Plate.  After the first taste, I heard mixed combinations of what this delicious, yet healthy breakfast reminded them of…warm apple pie, elephant ears with apples just to name a few.  As you can imagine, they were excited and loved the dish, I even had a request to make another one tomorrow. Ingredients
Puff Pancake
  • 4 (200g) Whole Large Eggs
  • 3 (93g) Egg Whites
  • 1 cup Unsweetened Almond Coconut Milk or Milk of Choice
  • 1 cup KFF Flour Blend or Flour of Choice (*See Tips/Suggestions Below)
  • ½ tsp Sea Salt
  • ½ tsp Cinnanon
Glazed Apples
  • 1lb Apple (I used Fuji Apples for this recipe, about 2 ½ Large Apples)
  • 2 tbs Kerry Gold Grass-Fed Butter or Coconut Oil
  • 2 tbs Coconut Sugar
What You Need
  • Cooking Spray (Olive Oil)
  • 3 (9) inch Cake Pans
  • Apple Core & Peeler (Optional)
  • Knife
  • Hand or Standing Mixer w/ Bowl
  • Whisk
  • Measuring Cups
  • Measuring Spoons
  • Large Skillet
  • Scale
Tips/Suggestions
  • KFF Baking Flour Blend (Makes 3 Cups): 128g Brown Rice Flour, 128g Oat Flour, 43g Tapioca Flour, 85g Potato Starch.
  • Drizzle Puff Pancake with Pure Maple Syrup for an added bonus.
Instruction
  1. Preheat oven to 400 degrees. Prepare cake pans with cooking spray, set aside.
  2. Place Eggs in mixer bowl, beat until slight fluffy. Add Milk, Flour, Sea Salt, Cinnamon and whisk, combining all ingredients.
  3. Evenly distribute egg mixture into the (3) cake pans (the mixture will be very thin-a liquid, do not be alarmed). Place in oven and bake for 25 minutes.
  4. Core and slice Apples (I prefer my apples NOT to be super thin). Heat skillet on medium, add butter and apples. Saute for 10 minutes, the edges may crisp. Sprinkle with sugar on same heat and saute for an additional 5 minutes, Apples will become tender and glazed.
  5. Plate first Puff Pancake, top with ⅓ of the Glazed Apples and repeat two more times. Drizzle with 100% Pure Maple Syrup or your syrup of choice. Served with a side of scramble eggs for a complete balanced breakfast.
