Cilantro Lime Rice & Chicken


“Girls Be Like…. OMG I Loooovvveeee Chipotle, Chipotle is my Liiiiife!!”  Please tell me you’ve had the pleasure of watching this hilarious video of a little guy imitating those that love Chipotle!!  If you haven’t, take a moment to Google it, I promise the video won’t disappoint.  Well, you’ve probably already come to the conclusion that this recipe is inspired by Chipotle and that awesome video.  The Cilantro Lime Rice is a mock version of the rice, topped with seasoned chicken breast and a fresh chunky salsa that only took a couple minutes to make. This is one of those fresh tasty dishes that makes you think of summer time!!

Cilantro Lime Rice
  • 5 Cups Water
  • ½ tsp Sea Salt
  • 2tbs Olive Oil
  • 2 Cups of Long Grain White Rice
  • 8g (1/2 cup) Fresh Cilantro (Chopped)
  • 1 Lime or 2tbs Lime Juice
Chicken Breast
  • 36oz Boneless/Skinless Chicken Breast
  • Sea Salt
  • Pepper
Fresh Salsa
  • 160g Red Onion
  • 8g (1/2 cup) Fresh Cilantro
  • ½ tsp Dried Oregano
  • ¾ tsp Cumin
  • 450g (16oz) Grape Tomatoes
  • 1tbs Lemon Juice
  • ½ tsp Sea Salt
What you need:
  • Large Pot
  • Large Spoon
  • Spatula or Large Fork
  • Measuring Spoons/Cups
  • Small Bowl
  • Medium Bowl or Container (for Salsa)
  • Cast Iron Skillet (or Skillet)
  • Knife
  • Scale
  • Blender or Processor (Optional)
  • Cooking Spray/Oil
  • Adjust amount of chicken & rice per serving to accommodate your needs.
  • This is a great recipe for meal prep for multiple days or to prepare for a large family.
  1. (For Cilantro Lime Rice) Add Water, 1tbs of Olive Oil and Sea Salt to pot. Bring to a boil on High. Add White Rice and continue to boil on High for 12-15 minutes.
  2. (For Fresh Salsa) Chopped Red Onions and Cilantro. Cut half of Grape Tomatoes, place remaining half in blender or processor (not pictured) and pulse 2-3 times.
  3. Combine Red Onions, Grape Tomatoes, Cilantro, Oregano, Cumin, Sea Salt and Lemon Juice. Set aside or place in refrigerator until ready to use.
  4. (For Cilantro Lime Rice) Reduce heat to Low, stir White Rice and cover. Continue to cook for additional 15 minutes.
  5. (For Chicken Breast) Heat skillet on Medium/High Heat, spray with cooking oil. Lightly season chicken with Sea Salt and Pepper. Cook until meat reaches internal temperature of 165 degrees. Set aside.
  6. (For Cilantro Lime Rice) In small bowl combine remaining tbs of Olive Oil, Cilantro and Juice from 1 Lime or 2tbs of Lime Juice. Remove White Rice from heat, add Cilantro mixture to rice and combine. Cover and allow to set for five minutes.
  7. Plate your dish with Cilantro Lime Rice, Chicken Breast and top with Salsa.
  8. Enjoy!!
