Blueberry Coconut Lemon Scones


I have always been a big fan of the blueberry & lemon combination in quick breads and muffins, but never had them as a scone. Today was the perfect day to whip up a homemade batch, but of course I had to add a little something extra. Instead of using an all flour based, I swapped out half with Coconut Flour, which creates a whole new, slightly moist texture to the scones. Enjoy!!

Dry Ingredients
  • 1 cup (128g) KFF Flour Blend or Flour of Choice (See note in tips)
  • ½ cup (56g) Coconut Flour
  • 1 tbs Coconut Sugar
  • 2 tsp Baking Powder (Preferably Gluten & Aluminum Free/Low Sodium)
  • ¼ tsp Sea Salt
Wet Ingredients
  • 1 tbs Coconut Oil
  • 2 tbs (32g) No Sugar Added Applesauce
  • ½ cup Unsweetened Almond Coconut Milk
  • 1 tbs Fresh Lemon Juice
  • 1 tsp Lemon or Vanilla Extract
  • 1 Large Egg
  • 50g Egg White (Equivalent to 1 Large Egg)
  • ¾ cup (111g) Fresh Blueberries
  • ¼ tsp Lemon Zest from 1 Lemon
To Shape Scones
  • ½ tbs Flour
Cream Cheese Lemon Drizzle
  • 2 tbs Neufchatel Cream Cheese
  • 1 tbs Lemon Juice (Use same Lemon)
  • 2 tsp Coconut Sugar
What You Need
  • Cookie Sheet
  • Parchment Paper
  • Cooling Rack
  • Measuring Spoons & Cups
  • Large Spoon & Small Spoon
  • Whisk
  • Knife
  • 1 Large
  • 2 Small Bowls (For Blueberries, Liquid & Cream Cheese Lemon Drizzle)
  • Scale
  • KFF Baking Flour Blend (Makes 3 Cups): 128g Brown Rice Flour, 128g Oat Flour, 43g Tapioca Flour, 85g Potato Starch.
  • If you desire a sweeter scone, add up to 24 drops of Natural Sweetleaf Stevia drops to mixture.
  1. Preheat oven to 400 degrees. Place parchment paper on cookie sheet, set aside.
  2. Combine all Dry Ingredients in large bowl, set aside. Combine all Wet Ingredients in small bowl, add to large bowl with Dry Ingredients.
  3. Juice & zest Lemon. Gently fold in Blueberries and Lemon Zest.
  4. Place ½ tbs flour on parchment paper. Dough will be a little sticky, roll and shape dough into a circle (flour will help). Take knife and gently cut dough into 8 wedges, keep the circle shape.
  5. Place scones in oven, bake for 20 mins.
  6. Remove scones from oven and place on cooling rack.
  7. Prepare drizzle; soften Neufchatel Cheese in microwave to soften. Combine remaining ingredients and drizzle over scones.
  8. Enjoy!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
