Taco Tuesday – Taco Chili Stacks


I have to say Taco Tuesday was a great success and these Taco Chili Stacks are winners in my book! This was another under 30 minute meal, the hardest part was probably waiting for the meat to cook. Considering we had beef last night for dinner, I opted for lean ground turkey today. The meat was cooked in a simple tomato/homemade sauce with black beans and simple seasonings, layered over corn tortilla shells and top with cheese. Each stack consisted of three full layers (of what I just detailed) and everyone had their own personal serving. To complete this meal, these delicious stacks were topped with cilantro, tomatoes, olives, lettuce, jalapeños and Greek yogurt?! 

Taco Chili Stacks

  • ½ tbs Olive Oil
  • 2lb Lean Ground Turkey
  • 1 Large Onion (Chopped)
  • 2 cans - 14.5 oz Petite Diced Tomatoes w/Chilies
  • 1 cup Tomato Sauce
  • ½ - 1 cup Black Bean (Depends on preference)
  • 2 tbs Chile Powder
  • ½ tsp Sea salt
  • 1 tsp Oregano
  • 1 tsp Cumin
  • 2 cups Shredded Cheese (I used Monterey Jack & Mozzarella)
  • 18 Small Corn Tortilla Shells
Optional Toppings
  • Cilantro
  • Jalapenos
  • Greek Yogurt
  • Tomatoes
  • Black Olives
  • Lettuce
What You Need
  • Large Skillet
  • Spatula or Spoon
  • Knife
  • Large Cookie Pan or Sheet
  • Measuring Spoons
  • Can Opener
  • Olive Oil Cookie Spray
  • Top with any additional ingredients you may like!
  1. Preheat oven to 350 degrees. Prepare cookie sheet with light Olive Oil spray mist.
  2. Heat Olive Oil in Skillet on Medium/High, brown Onions and add Ground Turkey. Continue cooking until Turkey is fully cooked (5-7 minutes).
  3. While Turkey continues to cook add Petite Diced Tomatoes w/Chilies, Tomato Sauce, Black Bean, Chile Powder, Sea salt, Oregano and Cumin. Cook for additional 3-5 minutes.
  4. Layer each stack by starting with Small Corn Tortilla Shell, Meat Mixture and Cheese. Repeat (2) more times for each stack. Each Stack will have three layers.
  5. Place in oven and bake for 15 minutes or until cheese has melted.
  6. Remove from oven and top as you desire.
  7. Enjoy!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
