(White House Healthy Lunchtime Challenge Recipe) Sweet Kick Slaw & Salmon Over Quinoa


This delicious dish was prepared by a  Kia’s Fit Fare Mini Chef for the White House Healthy Lunchtime Challenge.  Auriona loves Salmon and decided to put her own twist on a favorite!

(White House Healthy Lunchtime Challenge Recipe) Sweet Kick Slaw & Salmon Over Quinoa

  • (2-6 oz each) 2 Servings Wild Sockeye Salmon (Skin side off or on)
Sauce for Salmon
  • ½ tbs Chili Sauce
  • 1 tbs Orange Marmalade
  • ½ tbs Olive Oil
  • ½ tsp Ginger
  • 1/16 Salt & Pepper
Sauce for Slaw
  • 2 tbs Rice Vinegar
  • ½ tbs Chili Sauce
  • 1 tbs Marmalade
  • 1 Green Onion
  • ½ tbs Oil
  • 1/16 tsp Salt
Cabbage Mixture
  • ½ cup Green Cabbage
  • ½ cup Red/Purple Cabbage
  • ½ cup Peas
  • ½ cup Carrots
Quinoa (2 servings)
  • Low Sodium Soy Sauce (Optional)
  1. Prepare Quinoa as directed on package or use rice cooker.
  2. Combine Sauce for Salmon, pour over salmon and cook on Broil, 10-15 minutes or until top reaches desired crispness (You can cook with bottom side up for 5 minutes if you prefer a crispy bottom).
  3. Combine sauce for slaw, set aside in refrigerator. Prepare/combine cabbage ingredients, chop if needed.
  4. Place Slaw sauce over cabbage and combine until fully coated.
  5. Plate with serving of Quinoa (toss with ½ tbs of Low Soy Sauce for more flavor if desire), Salmon and serving of Slaw.
  6. Enjoy!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
