Coconut Chocolate Chip Cookie Dough Truffles

Here’s a quick little protein treat you can try right now. I will be the first to say that I am not a fan of using coconut flour, but they really work great for these truffles and contribute to that cookie dough taste and texture!! Although I used Fitness Model/Writer Jamie Eason Labrada Nutrition Lean Body for Her Peanut protein, you can try this with any protein you have available. It seriously only took me a few minutes to mix the ingredients and roll the truffles, so what are waiting for….Enjoy! (Be sure to save this easy recipe and tag a friend) ~Kia

Ingredients:
43g Protein of Choice
2 tbs Coconut Flour
2 tbs Unweetened Shredded Coconut (If you have large pieces, crumble them with your hand)
3 tbs Unsweetened Almond Coconut Milk (or Liquid of choice)
1 Tbs Mini Dark Chocolate Chips

Instructions:
1.Combine all ingredients (minus chips).
2. Add Chocolate Chips, combine and roll into truffles. Recipe makes 5 truffles.
3.Enjoy!!

Easy Turkey Meatballs

(Quick Dinner Snapshot ) BBQ Turkey Meatballs w/Rice, Peas & Minced Onions

I had to snap a shot of these delicious, yet simple lean turkey meatballs. To make perfectly tender meatballs, I prefer to add a soft bread, instead of actual breadcrumbs. Call me crazy, but I think it totally changes the texture. Lean Turkey + a few simple ingredients = the perfect meatballs!! Our plates were completed with a side of rice, peas & minced onions…Yum!  (Courtesy of my IPhone)
