Strawberry Cheesecake & Cream Cups

It has definitely been a while since my last Quest Bar, but even with that said, you know I can’t just eat the bar like a normal person…you have to get creative with Quest Bars!  Each cup starts with a Strawberry Cheesecake Bar, filled with a cream mixture made from Neufchatel Cheese & Cottage Cheese, the cups are coated with 62% Dark Chocolate Chips and topped with fresh Strawberry Slices.  Easy & Delicious….I hope you give it a try!

Ingredients
  • 1 Quest Nutrition Strawberry Cheesecake Bar (Buy at Quest NOW)
  • 63g Lowfat Cottage Cheese
  • 63g Neufchatel Cheese
  • 30g (2tbs) 62% Dark Chocolate Chips (or Chocolate of Choice)
  • 2 Medium Strawberries (Sliced)
What You Need
  • Cooking Spray (Olive Oil)
  • Mini Muffin Tin w/Liners
  • Roller (To Flatten Quest Bar)
  • Blender/Processor
  • Small Pot or Double Broiler
  • Spoon/Whisk
  • Scale
Tips/Suggestions
  • To sweeten cream mixture, I added Sweet Leaf Stevia Drops to taste (15 drops), you can use less or more as you desire. If you prefer not to use drops, add your sweetener of choice.

Instruction
  1. Preheat oven to 350 degrees. Prepare mini muffin tin with liners and lightly spray with cooking oil, this helps with easy removal.
  2. Roll out Bar, cut into 6 even squares. Shape each square into a circle and place in pan, make sure to smooth out cup and shape around the sides.
  3. Place in oven, bake for 4-5 minutes. Once removed, the cups will be slightly puffy, take your thumb or a spoon and press down the center. Allow to cool.
  4. Melt Chocolate and coat tips/tops of each cup, set aside to allow chocolate to set.
  5. Combine Neufchatel Cheese and Cottage Cheese with sweetener in processor, blend.
  6. Evenly distribute cream into each cup, top with a strawberry slice.
  7. Enjoy!!

Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
