Banana PB Chickpea Protein Blondies

After taking a break from working, I got up inspired to whip together a quick treat that I could enjoy and would also be great as an after school snack for the kiddos. To bump up the protein, I added one scoop of Jamie Eason’s Lean Body for Her Whey Isolate Natural Vanilla, combine that with the chickpea base (yes, Chickpeas) and you get 5g of protein per blondie! When the kiddos arrived home, I served up blondies with a glass of milk and asked them to guess the ingredients as they devoured them. My kiddos know food and guessed every single ingredient, except the chickpeas. As they all asked for seconds, I pulled out a can of chickpeas from the cabinet and broke the news.   • 260g (1 can) Chickpeas
  • 64g (1/4 cup) Natural Peanut Butter of Choice (I uses Earth Balance Coconut Peanut Spread)
  • 60g (1/4 cup) 100% Pure Maple Syrup or 60g of raw Honey
  • 31g (1) Egg White
  • 113g (1 Medium) Banana
  • 1 tsp Vanilla (I use Simply Organic)
  • 42g (1 scoop) Jamie Eason’s Lean Body for Her Whey Isolate Natural Vanilla
  • ½ tsp Baking Soda
  • 3 tbs (45g) Dark Chocolate Chips or Chunks (62-80% Dark Chocolate)
  • ½ tbs (8g) Mini or Regular Dark Chocolate Chips (62-80% Dark Chocolate)
What You Need
  • Processor
  • Measuring Spoon
  • Large Spoon
  • Scale
  • 8x8 Brownie Pan
  • Parchment Paper/Cooking Spray
  • Add more or less chocolate chips as you desire.
  • Feel free to add nuts to recipe and other add-ins.
  1. Preheat oven to 350. Prepare pan with parchment paper and/or spray, set aside.
  2. Place all ingredients (minus chocolate chips) in processor, blend until smooth.
  3. Add 3 tbs of Chocolate Chips to mixture, combine with spoon. Spread batter in pan, top with remaining Mini Chocolate Chips.
  4. Place in oven and bake for 23-25 minutes. Remove from oven and allow to cool in pan for (5) minutes, remove and place on wire rack or plate to continue cooling for additional 5 minutes. Cut into 12 or 16 bars.
  5. Enjoy!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
