Black Bean & Salsa Stuffed Sweet Potato

Happy New Year friends & family!! My first dinner of the year was simply fantastic and a bit different from my typical meals. If you notice, I listed this meal as Vegan & Daniel Fast Friendly, because for the first three weeks of each New Year I actually commit to the Daniel Fast for my own personal and spiritual reasons (You can google it to find out more info. or simply ask me). Now I am a firm believer that when you Fast, this is to be done in consecration and is a sacred time set aside for you to focus on God. However, I also believe that by sharing how I am able to incorporate the guidelines of the Daniel Fast, I may encourage others and help them while on their own Fast. My prayer is that what I share is helpful to someone.

Back to the DINNER….This recipe is super easy and consists of a Baked Sweet Potato, stuffed with a combination of Black Beans and Salsa, topped with sliced Mushrooms and Onions sautéed and a small amount of Olive Oil. Told you it was easy!!

  • 5oz Baked Sweet Potato
  • 1 cup Black Beans (I used canned Black Beans)
  • ¼ cup Salsa
  • ½ cup Mushroom (Sliced-Up to 1 cup)
  • ¼ – ½ cup Onions (Sliced)
  • Olive Oil or Cooking Spray (Optional)
What You Need
  • Baking Pan
  • Small Pot
  • Small Skillet
  • Spatula
  • Knife
  • Nutritional value will change based on size of potato used.
  • Add additional protein source such as chicken, turkey or shrimp to increase protein.
  1. Preheat oven to 400 degrees. Place Sweet Potato in pan and pierce with knife or fork. Bake for 45 minutes to 1 hour.
  2. Heat Beans in pot, add Salsa.
  3. Heat Oil in skillet and sautéed sliced Mushrooms & Onions until reaches desired doneness.
  4. Plate Sweet Potato and cut down the middle. Spoon Bean Mixture in Potato, top with sautéed Mushrooms & Onions.
  5. Enjoy!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
