  • ¼ cup 100% Pure Maple Syrup
  • 113g (1) Medium Banana
  • 50g Egg White (Equivalent to 1 Large Egg)
  • ½ tsp Vanilla (I use Dimply Organic)
Protein Coconut Whipped Cream
What You Need
  • 2 Bowls
  • Cookie Sheet/Silicone Cookie Pad
  • Parchment Paper (Optional)
  • Whisk or Spoon
  • Measuring Spoons & Cups
  • Ice Cream Scooper (Optional)
  • Scale
  • Cooking Spray/Oil
  • Hand Mixer
Tips/Suggestions
  • KFF Baking Flour Blend (Makes 3 Cups): 128g Brown Rice Flour, 128g Oat Flour, 43g Tapioca Flour, 85g Potato Starch.
  • Not in a mood for the whoopee pie, simply enjoy the rounds as a delicious soft cookie.
Instruction
  1. (For Protein Coconut Whipped Cream) Place can of coconut milk in refrigerator for 15-30 minutes. Remove only thick/solid portion of milk from top and spoon in separate bowl (about 160g of thick milk). Add Protein and combine ingredients together using a hand mixer. Cream will slightly thicken, mix 3-5 minutes. Place in refrigerator, whipped cream will continue to thicken.
  2. Preheat oven to 350 degrees. Prepare cookie sheet with cooking spray and/or parchment paper if you are using.
  3. Combine all dry ingredients, set aside.Combine all wet ingredients. Add to bowl with dry ingredients. Combined mixture thoroughly.
  4. Drop batter by one or two scoops on cookie sheet (1 scoop makes 20-22 bite size cookies).
  5. Bake for 10-13 minutes (Remember all ovens are not created equal).
  6. Remove from oven; allow to cool for 1 minute on cookie sheet. Remove from cookie sheet and place on cooling rack or plate to cool.
  7. Complete each Whoopie Pie by placing 1-2 tbs of Whipped Coconut Cream between two rounds.
  8. Enjoy!!
