Ingredients
Base Ingredients
  • 160g Jamie Eason Lean Body For Her Multi-Purpose Peanut Protein
  • 120g (1.5 cup) Quaker Quick Oats
  • 168 (1.5 cup) Cashews
  • ¼ tsp Sea Salt
  • 60g (¼ cup) 100% Pure Maple Syrup
  • 5 tbs Almond Breeze Unsweetened Almond Coconut Milk (Vanilla Flavored Optional)
  • 1 tsp Vanilla Extract (I use Simply Organic Vanilla)
Coconut Layer
  • 120g Unsweetened Shredded Coconut (Finely Shredded or Regular Shredded Works)
  • 3 tbs Spectrum Coconut Oil
  • 3 tbs 100% Pure Maple Syrup
Ganache Layer
  • 56g Fage Total 0% Greek Yogurt
  • 60g (1/4 cup) Dark Chocolate Chips or Chunks (62-80% Dark Chocolate)
What You Need
  • 8x8 Brownie Pan
  • Parchment Paper
  • Cooking Spray/Olive Oil
  • Pizza Cutter/or Knife
  • Saran Wrap/or Foil
  • Small Microwavable/Oven Safe Bowl
  • Processor
  • Large Spoon
  • Measuring Spoons
  • Scale
Tips/Suggestions
  • Keep bars refrigerated and eat cold or allow to set out at room temperature for a few minutes before enjoying.
  • To store, wrap in saran wrap or plastic container and keep refrigerated.
Instruction
  1. Add first (4) Base Ingredients in processor, combine to fine mixture. Add remaining (3) Base Ingredients to processor and combine.
  2. Prepare Brownie Pan with Parchment Paper and lightly mist with Spray. Press mixture into pan evenly.
  3. Rinse out processor and dry. Add Coconut Layer ingredients to processor and combine. Distribute Coconut Layer evenly over Base Layer. Cover with Saran Wrap and place in freezer for 10 minutes.
  4. Add Chocolate Chips/Chunks to bowl, melt in oven or microwave. Once melted, add Greek Yogurt to Chocolate and quickly mix. Remove pan from freezer and evenly distribute Ganache over bars.
  5. Cover pan and allow to set in refrigerator for a minimum of 30 minutes.
  6. Cut bars into 16 even slices.
  7. Enjoy!!
