Roasted Vegetable Quinoa Salad

Ingredients
Vegetables to Roast
  • 340g Eggplant
  • 150g Purple Onion
  • 1 Yellow Bell Pepper
  • 1 Red Bell Pepper
  • 1 tbs Minced Garlic
  • 3 tbs Extra Virgin Olive Oil
  • ½ tsp Sea Salt
  • ½ tsp Pepper
  • 1.5 cup Quinoa
Dressing
  • 1 tbs Extra Virgin Olive Oil
  • ⅓ cup Red Wine Vinegar
  • 1 tbs Coconut Sugar
  • 5g Scallions (Chopped)
  • 1 tsp Dried Basil
What You Need
  • 13x9 in Pan
  • Knife or Vegetable Chopper
  • Measuring Spoons
  • Small Bowl
  • Spoon or Whisk
  • Pot w/Lid
  • Scale
Instruction
  1. Preheat oven to 425 degrees.
  2. Clean all Vegetables and chop, add to pan. Add Minced Garlic, Olive Oil, Sea salt, Pepper and toss to distribute evenly over vegetables. Place pan in oven and bake for 35 minutes.
  3. Prepare Quinoa as directed on package, set aside.
  4. Add dressing ingredients to small bowl, set aside.
  5. Add prepared Quinoa to serving bowl, add roasted Vegetables, and dressing. Gently toss to distribute dressing.
  6. Plate as you desire.
  7. Enjoy!
