Parmesan Almond Chicken

You can find faux fried chicken recipes all over the internet and coobooks with different techniques and ingredients. So, I decided to add my own twist to a favorite dish shared by so many. What’s so different about this recipe, it’s the sauce that keeps the ingredients all together…BBQ sauce. This simple addition combined with parmesan in the crust creates a marriage of flavors.

Parmesan Almond Chicken

  • 6-5oz (30oz total) Boneless/Skinless Chicken Thighs or Chicken Breast
  • ½ cup BBQ Sauce (I used an organic brand without added colors and preservatives)
  • 30g Sliced Almonds
Crust Ingredients
  • 20g Parmesan
  • 28g Almond Meal
  • ¼ tsp Pepper
  • ½ tsp Garlic
  • 1 tbs Italian Seasoning
What You Need
  • 1 Small Bowl (Almonds)
  • 2 Bowls (BBQ Sauce & Parmesan Crust Mixture)
  • Baking Pan or Casserole Dish
  • Fork or Whisk
  • Measuring Spoons
  • Scale
  1. Preheat oven to 400 degrees.
  2. Clean and dry your Chicken, be sure to remove extra moisture with napkin.
  3. Place BBQ Sauce in bowl, set aside. Place Crust Ingredients in bowl, set aside.
  4. Dip Chicken in BBQ Sauce, evenly distribute Almond slices on chicken and cover with Crust Mixture.
  5. Use any remaining Crust Mixture that fell off chicken and coat bottom of pieces before placing in pan.
  6. Bake for 30 minute (Breast), 40 minutes (Thigh) or until juices run clear.
  7. Plate as you desire.
  8. Enjoy!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
