Oh I am definitely feeling that Pumpkin Vibe as of late! Pumpkin Cream Cheese Oat & Protein Muffins with Jamie Eason’s Labrada Nutrition Lean Body for Her Vanilla Protein! Although these are protein muffins, you can easily swap out ingredients to make them all Oat or use your flour of choice. Tis’ the season for all things PUMPKIN, hope you ENJOY!!

Dry Ingredients
  • 64g (1/2 cup) KFF Flour Blend or Flour of Choice (See note below in tips)
  • 64g (1/2 cup) Jamie Eason’s Lean Body for Her Whey Isolate Natural Vanilla
  • 128g Quaker Quick Oats
  • 1 tsp Baking Powder (Preferably Gluten & Aluminum Free/Low Sodium)
  • ½ tsp Baking Soda
  • 2 tsp Pumpkin Spice (or Make Your Own)
  • 26g (4tbs) Golden Flaxseed Meal (I use Bob’s Red Mill Brand)
Wet Ingredients
  • 50g (1) Large Egg
  • 244g (1 cup) Pumpkin
  • 113 (1/2 cup) Fage Greek Yogurt
  • ¼ cup Unsweetened Almond Coconut Milk
  • 80g (1/3 cup) Coconut Sugar
  • 63g (1/4 cup) No Sugar Added (Unsweetened) Apple Sauce
  • 1 tsp Vanilla (I use Simply Organic Vanilla)
  • 168g (6oz) Neufchatel Cheese
  • 1 tbs Coconut Sugar
What You Need
  • Muffin Tin/Pan & Liners
  • Measuring Spoons & Cups
  • Large Spoon & Small Spoon
  • Whisk or Fork
  • 1 Large Bowl
  • 1 Medium Bowl
  • 1 Small Bowl
  • Cooking Spray (Olive Oil or Coconut Oil)
  • Scale
  • KFF Baking Flour Blend (Makes 3 Cups): 128g Brown Rice Flour, 128g Oat Flour, 43g Tapioca Flour, 85g Potato Starch.
  1. Preheat oven to 350. Prepare Muffin Tin/Pan with liners and lightly oil with cooking spray, set aside. Place Topping Ingredients in small bowl, set aside.
  2. Combine all Dry Ingredients, set aside.
  3. Combine all Wet Ingredients, combine thoroughly. Add Wet Ingredients to Dry Ingredients.
  4. Evenly distribute batter into 12 muffin cups (Full Pan).
  5. If Topping Mixture is too thick, you can soften by placing in microwave for a few seconds. Evenly distribute dollops of Neufchatel Cheese mixture in center of muffins.
  6. Place in oven and bake for 26-28 minutes. **Remember, all ovens are not created equal.**
  7. Remove from the oven; allow to cool in Pan for 5 minutes.
  8. Remove from Pan and place on Wire Rack to continue cooling.
  9. Enjoy!!
