Coco-Coconut Bars

Well of course chocolate and coconut makes a great blend!! This sweet treat is filled with Almond Butter, Dark Chocolate, Dark Chocolate chunks, and Shredded Coconut….I think that combo alone would be the start of something great and delicious!!

  • 128g (½ cup) Almond Butter (or Nut Butter of Choice)
  • ¼ cup Hershey’s Dark Cacao Powder
  • 1 Large Egg
  • ½ cup 100% Pure Maple Syrup
  • 1 tsp Vanilla (or Coconut Extract)
  • 56g (½ cup) Almond Meal ( I use Bob’s Red Mill)
  • 1 tsp Baking Powder (Preferably Gluten & Aluminum Free/Low Sodium)
  • 32g (1/4 cup) KFF Flour Blend or Flour of Choice (See note below in tips)
  • ¼ cup Dark Chocolate Chunks
  • 1 tbs Fine Shredded Coconut
What You Need
  • Large Bowl
  • Whisk
  • Measuring Spoon
  • 8x8 Brownie Pan
  • Parchment Paper (Optional)
  • Scale
  • KFF Baking Flour Blend (Makes 3 Cups): 128g Brown Rice Flour, 128g Oat Flour, 43g Tapioca Flour, 85g Potato Starch.
  1. Preheat oven to 350 degrees.
  2. In large bowl, combine Almond Butter and Cocoa. Whisk in your egg, Maple Syrup and Vanilla.
  3. Add Almond Meal, Baking Powder and Flour directly into mixture, stir until combined.
  4. Fold in Dark Chocolate Chunks.
  5. Prepare brownie pan and add mixture, evenly distribute Shredded Coconut over mixture. Bake for 17-19 minutes. Bars will still be slightly soft in the center, but will firm up as they cool. Do not overcook these bars; the almond butter will dry the recipe.
  6. Allow to cool in pan and cut into desired sizes (8, 12 or 16 bars).
  7. Enjoy!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
