Turtle Pumpkin Cheesecake Parfait

Seriously, this parfait was created with three layers of awesomeness. Shall we discuss them…..1st Layer – Crumbled Brownie Brittle Toffee Crunch (my FAV), 2nd Layer – Pumpkin Cheesecake prepared with a blend of Puree Pumpkin, Cottage Cheese, Neufchatel Cheese and sweeten with Coconut Sugar, 3rd Layer – A Decadent Turtle Crumb. For the turtle crumb, I prepared homemade caramel using coconut milk (OMG, this was my first time creating this and it was AMAZING), combined the caramel with more crumbled Toffee Crunch, Pecans and Shredded Coconut (Optional of course)….this was delicious!! Turtle Pumpkin Cheesecake Parfait

Bottom Layer/Crust
  • 126g Sheila G’s Toffee Crunch Brownie Brittle
Pumpkin Cheesecake Layer
  • 336g (1.5 cup) Low Fat Cottage Cheese (or Cottage Cheese of Choice)
  • 186g (about ¾ cup) Puree Pumpkin
  • 84g (6 tbs) Neufchatel Cream Cheese
  • ½ tsp Cinnamon
  • ⅛ tsp Nutmeg
  • 1/16 tsp Cloves
  • 45g (3tbs) Coconut Sugar
  • ½ tbs Lemon Juice
Homemade Caramel
  • 1 can Full Fat Coconut Milk
  • 60g (1/4 cup) Coconut Sugar
  • 1 tsp Vanilla
  • 1 tsp Lemon Juice
  • 1/16 tsp Sea Salt
Turtle Crumble Mix
  • 42g (6 tbs) Chopped Pecans
  • 42g Sheila G’s Toffee Crunch Brownie Brittle
What You Need
  • 6 Small Mason Jars/glasses
  • Processor/Blender
  • Small Pot/Sauce Pan
  • Whisk
  • Large & Small Spoon
  • Small Bowl
  • Measuring Spoons
  • Scale
  1. Crumble Brownie Brittle for bottom layer, evenly distribute in mason jars.
  2. Combine all ingredients for the Pumpkin Cheesecake Layer until smooth in processor. Layer parfait with cheesecake mixture.
  3. Add Homemade Caramel ingredients to pot, bring to a boil on medium/high heat and continue to whisk blending all ingredients. Allow to cook and simmer on medium for 15 minutes, whisking periodically. Sauce will slightly thicken once it cools.
  4. Add Turtle Crumble Mix to small bowl. Add 6tbs of the Homemade Caramel and combine. You can immediately layer parfait with final layer or allow the mixture to cool in the freezer/refrigerator than layer. *Refrigerate remaining caramel sauce for future use*
  5. Enjoy!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
