Banana Pineapple Crumb Bundt Cake

This beauty is a delicious and sweet take on the traditional Crumb Cake. Pineapples and Bananas are already a fantastic combo, but adding a cinnamon pecan crumb is surely an added bonus. As if that wasn’t enough, this crumb cake was topped with a tasty Neufchatel Maple Cheese drizzle.

Ingredients
Dry Ingredients
  • 192g (1.5 cup) KFF Flour Blend or Flour of Choice (See note below in tips)
  • 56g Almond Meal/Flour (I use Bob’s Red Mill Brand)
  • 2 tsp Baking Powder (Preferably Gluten & Aluminum Free/Low Sodium)
  • ½ tsp Baking Soda
  • ¼ tsp Sea Salt
Wet Ingredients
  • 50g (1) Large Egg
  • 56g (1/4 cup) Fage Greek Yogurt
  • 113g Pureed Bananas (Mashed)
  • 122g Crushed Pineapples (Drained)
  • 1tbs Coconut Oil
  • 47g (3tbs) No Sugar Added (Unsweetened) Apple Sauce
  • 2 tsp Vanilla (I use Simply Organic Vanilla)
Topping
  • 28g Chopped Pecans (or Nuts of Choice—Walnuts, Almonds, etc)
  • ½ tsp Cinnamon
Neufchatel Maple Drizzle
  • 2 tbs Neufchatel Cheese (This is a sub for Cream Cheese)
  • 1 tsp 100 % Pure Maple Syrup
  • 2 tsp Unsweetened Almond Coconut Milk (Blue Diamond Brand)
What You Need
  • Measuring Spoons & Cups
  • Large Spoon
  • Whisk or Fork
  • 1 Large Bowl
  • 1 Medium Bowl
  • Strainer
  • Bundt Pan (Small to Medium Size)
  • Cooking Spray (Olive Oil or Coconut Oil)
  • Scale
Tips/Suggestions
  • KFF Baking Flour Blend (Makes 3 Cups): 128g Brown Rice Flour, 128g Oat Flour, 43g Tapioca Flour, 85g Potato Starch.
  • If you prefer not to use the Neufchatel Maple Drizzle, drizzle with Pure Maple Syrup.
  • If you desire a sweeter cake, try SweetLeaf Stevia Liquid Drops or sweetener of taste. Be sure to taste your batter.
Instruction
  1. Preheat oven to 350 and prepare Bundt pan with cooking spray, set aside.
  2. Combine all Dry Ingredients, set aside.
  3. Combine all Wet Ingredients, including Bananas and Crushed Pineapples (Use Strainer to remove excess juice). Combine thoroughly.
  4. Add Wet Ingredients to Dry Ingredients, set aside.
  5. Combine Chopped Pecans and Cinnamon. Evenly distribute Pecan Mixture in Bundt pan.
  6. Pour batter in pan and smooth out.
  7. Place in oven and bake for 40mins. At the 30-35 min mark, check your cake for doneness **Remember, all ovens are not created equal.**
  8. Remove from the oven; allow to cool in Pan for 5mins.
  9. Remove from Pan and place on Wire Rack (or plate) to cool. Prepare Drizzle.
  10. Glaze your cake with drizzle.
  11. Allow to cool for additional 10-15 minutes before cutting. Cut into 16 slices.
  12. Enjoy!!
