Protein Base
  • 128g NutriForce Sports NutriWhey Vanilla
  • 28g (4tbs) Coconut Flour (I use Bob’s Red Mill)
  • ¼ cup Blue Diamond Almond Coconut Milk Unsweetened
  • 64g (4tbs) Earth Balance Coconut Peanut Spread (Or use Peanut Butter of choice)
  • 1 tbs 100% Pure Maple Syrup
  • 1 tbs Coconut Sugar
Chocolate Yogurt Ganache
  • 56g (1/4 cup) Fage Greek Yogurt
  • 60g (1/4 cup) Dark Chocolate Chips/Chunks (I used 62% Dark Chocolate)
  • Feel free to sweetened the Chocolate Ganache with 100% Pure Maple Syrup or Stevia Drops if you desire a sweeter chocolate.
What You Need
  • Wax Paper or Parchment Paper (For easy removal)
  • 8x8 Baking Pan/Brownie Pan
  • Microwave or Double Broiler
  • Processor
  • Measuring Spoons & Cups
  • Small Bowl
  • Spoon
  • Knife or Pizza Cutter
  • Scale
  1. Combine all ingredients (not toppings) in processor until broken down and completely blended (mixture should stick well together and form a ball).
  2. Line baking sheet with wax or parchment paper. Place protein in pan and press down, be sure to completely smooth out mixture. Place in refrigerator.
  3. Place chocolate in small bowl and melt in microwave (or use double broiler if you prefer). Add Greek Yogurt and quickly combine (mixture will harden).
  4. Top melts with Chocolate Yogurt Ganache and smooth out. Place in refrigerator, allow to set until ganache is firm.
  5. Cut mets into 16 even squares.
  6. Enjoy!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
