Vanilla Protein Cupcakes w/Strawberry Frosting

A bit of protein added to your sweet treat never hurt anyone, right?! With all the birthdays we had in August, I spent a nice amount of time baking cakes & cupcakes and naturally I played around with adding NutriWhey. The Vanilla Cupcake was prepared with my fav flour blend and NFS Vanilla NutriWhey, they were frosted with a Strawberry Protein Frosting made with Neufchatel cheese, Fage Greek Yogurt & NFS Alpine Strawberry NutriWhey. Ingredients
Dry Ingredients
  • 128g (1 Cup) KFF Flour Blend (Or use flour of choice such as Oat, Barley, Brown Rice, etc. You can find my flour blend recipe below in Notes)
  • 128g (1 cup) NutriForce Sports NutriWhey Vanilla (See Note for using less Protein & Recommendation)
  • ½ tsp Sea Salt
  • 4 tsp Baking Powder (Preferably Gluten & Aluminum Free/Low Sodium)
Wet Ingredients
  • 1 tbs Coconut Oil
  • 47g (3tbs) Unsweetened Apple Sauce
  • 90g (6tbs) Coconut Sugar
  • 1 Whole Large Egg
  • 50g Egg White (Equivalent size to 1 Large Egg)
  • 1tsp Vanilla Extra (I use Simply Organic)
  • 1 cup Blue Diamond Almond Coconut Milk Unsweetened
Frosting
  • 112g (½ cup) Plain Neufchatel Cheese (Can use plain Cream Cheese or Strawberry Cream Cheese if desire)
  • 112g (1/2 cup) Fage Greek Yogurt
  • 28g NutriForce NutriWhey Alpine Strawberry
What You Need
  • 2 Large Bowls
  • Mixer or Hand mixer
  • Measuring Spoons & Cups
  • Large Spoon
  • Muffin Tin & Cupcake Liners
  • Cooking Spray
  • Scale
Tips/Suggestions:
  • KFF Baking Flour Blend (Makes 3 Cups): 128g Brown Rice Flour, 128g Oat Flour, 43g Tapioca Flour, 85g Potato Starch.
  • Baking with protein can be drying. If you desire to use less protein, follow this combination: 1.5 cup Flour (192g) + ½ cup (64g) Protein Powder. **Highly Recommend**
Instruction
  1. Preheat oven to 400 degrees. Prepare muffin tin with cupcake liners. Lightly mist with Cooking Spray.
  2. Combine all dry ingredients in large bowl, set aside.
  3. Combine Coconut Sugar, Coconut Oil and Applesauce in mixer for 3 minutes. Add Eggs and Vanilla Extract, mix for additional two minutes. Continue to mix, add flour mixture and milk alternately until blended.
  4. Evenly distribute into cupcake liners. Bake for 15-17 minutes (Be sure to watch, cooking with protein varies and dries baked goods quickly).
  5. (For Frosting) Combine all ingredients in bowl with hand mixer. Place in refrigerator until ready to use. *Add sweetener to taste if desired.**
  6. Remove cupcakes from oven. Allow to cool on cooling rack.
  7. Frost cupcakes with Protein Frosting as desired.
  8. Enjoy!!
