Strawberry Cheesecake Brownie Brittle Parfait

This delicious parfait was created with a bottom layer of crumbled Sheila G’s Brownie Brittle, whipped cottage cheese/Maple Syrup/fresh strawberries (mock cheesecake-so delicious), chopped strawberries, brownie brittle and topped with one more strawberry for good measure! This was a delicious after school snack enjoyed by the kiddos and YES, of course I had mine too!!

Bottom Layer
  • 14g Sheila G’s Mint Chocolate Chip Brownie Brittle (Crumbled)
Cheesecake Layer
  • 113g Low Fat Cottage Cheese
  • ½ tbs 100% Pure Maple Syrup
  • ½ tsp Lemon Juice
  • 1 Strawberry
Top Layer
  • 1 Strawberry Chopped
  • 14g Sheila G’s Mint Chocolate Chip Brownie Brittle (Crumbled)
  • 1 Strawberry (Sliced)
What You Need
  • Glass or Mason Jar
  • Spoon
  • Measuring Spoon
  • Processor
  • Knife
  • Scale
  • Add more sweetener & lemon juice to taste for the cheesecake layer.
  1. Add all cheesecake layer ingredients to processor, combine until smooth.
  2. Layer glass with Brownie Brittle, Cheesecake Cake Layer, Chopped Strawberries and more Brownie Brittle.
  3. Top with sliced strawberry if desired.
  4. Enjoy!!!
