Double Strawberry Protein Bars

Strawberries & Chocolate, need I say more?! This tasty combo tops homemade protein bars prepared with NutriForce Sports Vanilla NutriWhey, Coconut Flour, Cashews and sweeten with Dates. Ingredients
Ingredients
  • 40g Pitted Dates
  • 128g NutriForce Sports NutriWhey Alpine Strawberry
  • 28g (4tbs) Coconut Flour (I use Bob’s Red Mill)
  • 56g Raw Cashews
  • ½ tsp Strawberry Extract (I use Simply Organics)
  • ¼ cup Blue Diamond Almond Coconut Milk Unsweetened
Topping
  • 2 Large Strawberries Sliced
  • 15g (1 tbs) Dark Chocolate Chunks/Chips (I used 62% Dark Chocolate)
What You Need
  • Wax Paper
  • Processor
  • Measuring Spoons & Cups
  • Small Bowl
  • Spoon
  • Knife or Pizza Cutter
  • Scale
Instruction
  1. Combine all ingredients (not toppings) in processor until broken down and completely blended (mixture should stick well together and form a ball).
  2. Place mixture on a sheet of wax paper. Shape into one large bar/rectangle with a 3 inch length.
  3. Cut rectangle into 8 even bars, top with strawberry slices (gently press down) and place in refrigerator.
  4. Place chocolate in small bowl and melt in microwave. Drizzle bars with melted chocolate and allow to set (preferably in refrigerator, but up to you).
  5. Enjoy!!
