Strawberry Lemon Bread

A few weeks ago, I asked all Kia’s Fit Fare followers on IG, FB & Twitter to help pick my next quick bread flavor. I received a lot of feedback and took notes, than I decided to go on a whim and create something a little different based off your replies…here we have a delicious and moist Strawberry Quick Bread, with an added twist from Lemon Zest. The fabulous glaze was made with Neufchatel Cheese, Lemon Juice and sweeten with a small amount of Coconut Sugar. Yes, this bread is AMAZING!!!

Strawberry Lemon Bread w/Creamy Lemon Glaze

Dry Ingredients
  • 256g (2 cups) KFF Flour Blend (See Note or you can use flour of choice)
  • 2 ½ tsp Baking Powder (Preferably Gluten & Aluminum Free/Low Sodium)
  • ½ + ¼ tsp Baking Soda
  • ¼ tsp Sea Salt
  • 4 tbs, 26g Golden Flax Seed Meal
Wet Ingredients
  • 170g (¾ cup) Greek Yogurt (Fage is my preference)
  • 1 Large Egg
  • 50g Egg White (Equivalent to One Whole Large Egg)
  • 1tbs Strawberry Extract (I use Simply Organic)
  • 80g (1/3 cup) Coconut Sugar (Can use sweetener of choice)
  • 1 tbs Lemon Zest
  • 63g (1/4 cup) Apple Sauce (No Sugar Added)
  • 166g (1 cup) Fresh Strawberries (Chopped)
Creamy Lemon Glaze
  • 2tbs Neufchatel Cheese
  • 1-2 tbs Lemon Juice (Amount based on how thick you desire your glaze)
  • 10g (2 tsp) Coconut Sugar
What you need:
  • Two Large Bowls or Mixer and Larger Bowl
  • One Small Bowl
  • Measuring Spoons
  • Whisk or Fork
  • Loaf Pan
  • Cooking Spray/Oil
  • Scale
  • Seran Wrap
  • Knife
  • Citrus Zester/Grater
  • KFF Baking Flour Blend (Makes 3 Cups): 128g Brown Rice Flour, 128g Oat Flour, 43g Tapioca Flour, 85g Potato Starch.
  • Remember, allow bread to cool for 10-15 minutes before cutting. Cut in to 10-12 thick slices, based on your preference. Bread can be cut as stated above, but ABSOLUTE best results are after allowing to cool in refrigerator overnight, slicing in the morning, and toasting or heating in microwave (Just a suggestion, but not necessary-I usually don’t wait :-).
  • Bread crust may be slightly harder to the touch, this is normal. After cooling and refrigerating, the crust will moisten yielding a perfect loaf. It is always better the next day!!
  • Nutrition facts are based on loaf cut into 14 slices. Note**Macros will vary based upon how many slices you cut.
  1. Preheat oven to 350 degrees. Lightly spray Loaf Pan and set aside.
  2. Combine all Dry Ingredients in large bowl, set aside. Combine all Wet Ingredient in second bowl.
  3. Make tunnel in center of Dry Ingredient. Slowly pour Wet Ingredients and combine gently. Do not over stir or beat.
  4. Fold in Strawberries. Pour batter in Loaf Pan and smooth out.
  5. Place in oven and bake for 50-55 mins. At the 40-45 min mark, check bread for doneness and place small piece of tented foil over the top (This will keep it from browning too much). **All ovens are not created equal, be sure to watch your bread once it reaches the 40-45 minute mark.
  6. Remove loaf from oven; allow to cool in Loaf Pan for 5mins.
  7. Remove from Loaf Pan and place on Wire Rack (or plate) to cool.
  8. (For Glaze) Soften Neufchatel in small bowl with a spoon or fork (or microwave for 5-10 seconds to soften). Add Lemon Juice, Coconut Sugar and combine.
  9. Drizzle Creamy Lemon Glaze over bread loaf.
  10. Allow to cool for 10-15 minutes before cutting. Cut in to 12 -16 slices, based on your preference. **See Additional Notes**
  11. To store, tightly wrap in Seran Wrap. keep in refrigerator until ready to use or place in a container with a lid.
  12. Enjoy!!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
