Ingredients
Toasted Oats
  • 40g (1/2 cup) Quick Quaker Oats
  • 7g (1tbs) Chopped Pecans
  • ½ tsp Cinnamon
Peach Cobbler Topping
  • 75g Peaches (1/2 of Peach)
  • 7g (1tbs) Chopped Pecans
  • ½ tsp 100% Pure Maple Syrup
  • ½ tsp Coconut Sugar
  • ¼ tsp Cinnamon
Yogurt Layer
  • 113g (1/2 cup) Fage Greek Yogurt
  • 1 tsp Coconut Sugar (Use more as desired, See Note)
  • ⅛ tsp Cinnamon
  • ⅛-1/4 tsp Vanilla (I use Simply Organic)
What You Need
  • Glass or Mason Jar
  • Spoon
  • 2 Bowls
  • Slicer/Peeler
  • Cooking Spray
  • Measuring Spoons
  • 2 Cookie Sheets or Oven Pans
  • Parchment Paper
  • Scale
Tips/Suggestions
  • For more protein, you can replace coconut sugar in yogurt layer and add 2 tbs of Vanilla Protein of choice.
Instruction
  1. Preheat oven to 375 degrees. Prepare cookie sheet with parchment paper (add a light spray of cooking spray/olive oil if you desire).
  2. Place Oats on cookie sheet, sprinkle with Cinnamon and Chopped Pecans (TIP: Add a light mist of your cooking spray to help cinnamon stick) Bake for 10 minutes.
  3. Peel and slice peach. Gently combine all Peach Cobbler Topping Ingredients, place on 2nd cookie sheet and bake for 25-30 minutes.
  4. Combine Yogurt Layer Ingredients in bowl, place in refrigerator until ready to use.
  5. Remove Oats from oven, allow to cool. Remove peaches from oven, allow to cool.
  6. Layer parfait with yogurt, fruit and oats.
  7. Enjoy!!!

Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
