Parmesan Polenta w/Shredded Chicken

This flavorful bowl of ingredients was a family pleaser.  The Sauté Mushrooms combined with Spinach and Shredded chicken was a delicious combo, but when topped over Parmesan Polenta, it became amazing.  This dish is a great play on flavors and different textures, but it comes to together perfectly.  Enjoy!!

Parmesan Polenta w/Shredded Chicken, Mushrooms & Spinach

  • 6 cups Low Sodium Chicken or Vegetable Broth (See Note)
  • 210g (1.5 cup) Polenta (I use Bob Red Mill Corn Grits/Polenta)
  • 1.5 tsp Minced Garlic
  • 3 tbs Extra Virgin Olive Oil
  • 30oz Chicken Breast (See Note)
  • 105g (1.5 cup) Mushrooms
  • 180g (6 cups) Spinach
  • 8tbs (1/2 cup) Parmesan Cheese
  • 1 tbs Bragg Liquid Aminos (or Soy Sauce of Choice)
  • Salt & Pepper to Taste
What You Need
  • Scale
  • Cutting Board
  • 2 Large Sauce Pans one w/ Lid
  • Whisk
  • Large Spoon or Spatula
  • Use less Chicken Broth if you desire a thicker Polenta consistency.
  • 30oz of Chicken listed in recipe is calculated raw, providing 5oz of chicken for each meal. You can prepare chicken breast in crockpot, grill or bake and shred. Other option is to use a Rotisserie-Style Chicken or swap with Shrimp or other protein of choice.
  1. Prepare Mushroom (clean and slice) and shredded chicken if needed. Set aside.
  2. Add Chicken Broth to first pan and bring to a boil on high. Add Polenta , bring to a boil and reduce to Low/Simmer for 20 minutes until Polenta thickens.
  3. As Polenta cooks, heat second pan on medium, add Olive Oil and Minced Garlic, cook for 2 minutes.
  4. Add Sliced Mushrooms and Shredded Chicken, cook for 5 minutes as you combine all ingredients.
  5. Reduce heat to Medium/Low. Add Spinach, Bragg Liquid Aminos and Salt & Pepper to taste. Combine ingredients, cover and cook for 3-5 minutes. Set aside.
  6. Add Parmesan to Polenta, Salt & Pepper to taste, and combine.
  7. Distribute Polenta in six bowls, top with Spinach & Mushroom mixture.
  8. Enjoy!!
