Quick Banana Oat Bake w/Maple Yogurt


I am definitely a fan of oats for breakfast, but not too crazy about always having a simple bowl of cooked oats. We prefer to enjoy our oats in muffins, breakfast bars or my favorite….Bakes. From previous recipes, you will note that I prepare oat bakes in the oven which takes almost an hour, but this time I decided to do a quick version for those of you short on time. This delicious baked was prepared to perfection in under two minutes…now I know you have two minutes to spare in the morning, right?! Be sure to leave a comment and let me know what you think!! Quick Banana Oat Bake w/Maple Yogurt

Dry Ingredients
  • 40g (1/2 cup) Quick Quaker Oats
  • ½ tsp Baking Powder (Preferably Reduced Sodium/Aluminum Free)
  • ¼ tsp Baking Soda
  • ¼ tsp Cinnamon
  • ⅛ tsp Sea Salt
  • ½ tbs Coconut Sugar or Sweetener of Choice
Wet Ingredients
  • 62g Egg Whites (Equivalent to 2 large Egg Whites)
  • 75g Bananas
  • ½ tsp Vanilla (I use Simply Organic)
Maple Yogurt Topping & Fruit
  • 14g (1 tbs) Fage Greek Yogurt
  • ½ tbs 100% Pure Maple Syrup
  • 42g (1/4) Berries of Choice
What You Need
  • Large Individual Ramekin
  • Cooking Spray/Olive Oil
  • Whisk
  • Measuring Spoons
  • Microwave
  • Scale
  • Two Small Bowls
  • Sauce Tray/Bowl (For yogurt)
  • Be sure to use Quick Oats for this Bake version in the microwave.
  • Opt for a different sweetener if you desire in bake and for yogurt/maple topping.
  • Omit yogurt & fruit topping and add your favorite syrup & fruit of choice.
  1. Combine all wet ingredients in bowl, set aside. Combine all dry ingredients in second bowl.
  2. Add wet ingredient to bowl with dry ingredients and mix thoroughly.
  3. Spray ramekin with cooking spray.
  4. Pour mixture in ramekin, microwave for 1min 40 sec to 1 min 45 secs. Remember, heat temperature vary for microwaves. (FOR BAKED VERSION) Heat oven to 350 degrees, bake for 25-30 minutes.
  5. Combine Yogurt topping in small bowl.
  6. Remove bake from microwave, plate or leave it in ramekin. Top with yogurt & fruit.
  7. Enjoy!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
