Pumpkin Chip Breakfast Oat Bars

These quick & easy delicious bars were prepared for the family and I received two-thumbs up all around!  For all my pumpkin foodies, this one is for you..this wholesome bar is filled with Oats, but the star is of course PUMPKIN!  You might think this looks like a dessert, but these are wholesome, satisfying and perfect for breakfast or a snack!!  Enjoy!!

Ingredients
Dry Ingredients
  • 180g Quaker Quick Oats
  • ½ tsp Baking Powder (Preferably Aluminum Free)
  • ½ tsp Baking Soda
  • ¼ tsp Sea Salt
  • 1 tsp Cinnamon (can sub for Pumpkin Spice)
Wet Ingredients
  • 244 grams (1 cup) Pumpkin (Canned-I used Libby’s)
  • 31g Egg White (1 Egg White)
  • 2 tsp Vanilla (I use Simply Organic)
  • 63g (1/4 cup) Natural Unsweetened Applesauce
  • 60g Raw Organic Honey (You can sub with 100% Pure Maple Syrup)
Add-Ins
  • 20g (1 tbs +1 tsp) Mini Dark Chocolate Chips (In Mix)
  • 30g (2 tbs) Mini Dark Chocolate Chips (Top)
Drizzle
  • 30g (2 tbs) Mini Dark Chocolate Chips
  • ½ tsp Coconut Oil
What You Need
  • Parchment Paper (For easy removal)
  • Large Bowl
  • Small Bowl
  • Mini Bowl (For melting Chocolate)
  • Microwave (or Double Broiler for melting Chocolate)
  • 9x9 Baking Dish
  • Small Spoon
  • Large Spoon or Whisk
  • Measuring Cups & Spoons
  • Cooling Rack
  • Scale
  • Cooking Spray/Oil
Tips/Suggestions
  • You can determine if you need more or less chips in your batter or on top as you desire.
  • The Drizzle is made up of 2tbs of Chips + ½ tsp Oil, I have found that half of this is actually enough to drizzle on top. If you decide to go this way, use 1 tbs of chips + ¼ tsp of Oil.
Instruction
  1. Preheat oven to 350 degrees. Prepare baking dish with parchment paper and cooking spray, set aside.
  2. Combine all Dry Ingredients, set aside.
  3. Combine all Wet Ingredients. Add wet mixture to Dry Ingredients and combine.
  4. Gently fold in Dark Chocolate Chips. Pour batter in prepared pan, top with more Dark Chocolate Chips and gently press down.
  5. Place in oven and bake for 20-25 minutes, depending on how soft you would like your bars.
  6. Remove from oven; allow to cool on cooling rack.
  7. Place Dark Chocolate Chips and Oil reserved for drizzle in mini bowl, heat in microwave. Stir mixture and drizzle over bars.
  8. Enjoy!!
