Berry Overnight Chia Oats

Overnight Chia Oats are a go-to breakfast in our home and a family favorite. Many people use Greek Yogurt, but I prefer mine with Cottage Cheese and Almond Coconut Milk.  The Cottage Cheese provides a completely different texture from the oats prepared with yogurt. You can use any fruit in this recipe, which means the flavor combination is quite endless.  My kiddos personally love Blueberries, because they become super plump and add sweetness. Prep time for this takes less than five minutes the night before, you toss everything in a mason jar and set it in refrigerator…wake up and you have a wholesome, quick meal already prepared!!!  If you forgot to prep it the night before (like I did this morning), prep everything in the jar and set in the refrigerator while you get ready (Mine set for a hour and was good to go).

Ingredients
Ingredients:
  • 40g, ½ cup Whole Oats
  • ½ cup Unsweetened Almond Coconut Milk (or Milk of Choice)
  • 75g, ⅓ cup Cottage Cheese (I used Fat Free)
  • 1tbs Black Chia Seeds
  • 1tbs Sweetener of Choice (Honey/Maple-I Use 100% Pure Maple Syrup)
  • ½ tsp Cinnamon
  • ¼ tsp Vanilla (Optional-I use Simply Organic)
  • ½ cup Berries (or fruit of choice, fresh or frozen-I use ¼ c Raspberries + ¼ c Blueberries)
What you need:
  • Mason Jar (w/lid) or bowl
  • Spoon
Other Add-In Options:
  • Nuts of choice
  • Add your favorite fruit
  • For sweetener, try jams/jellies/spreads
Instruction
  1. Place all items in Mason Jar, combine (I reserve ¼ cup of berries for the topping). Seal with lid or cover.
  2. Place in refrigerator overnight.
  3. Next morning, remove from refrigerator and stir.
  4. Enjoy!!! (It’s just that simple)
