KFF Quick Meal Idea – April 10, 2014

Simple.Parm(500) (1 of 1)Healthy Food For Thought: (Lunch, Dinner) Quick Eggplant Parmesan over Maifun Brown Rice Noodles

Here’s another quick and easy meal for you guys…30 minutes from start to finish. For this dish, I used Annie Chun’s Maifun Brown Rice Noodles (2-4 minutes to boil). Next, I chopped the eggplant and prepared them with a breading made with Flaxseed Meal/Almond Meal/Oat Flour/Garlic/Italian Seasonings and a few others. From here I simply broiled the eggplant for 20 minutes, flipped once, topped with Mozzarella for the last 2-3 minutes, removed and plated the completed dish, topping it with pasta sauce of choice. If you want more protein, you can topped eggplant with shredded chicken/beef or simply add a serving of your favorite on the side. It was seriously that easy and so delicious…Enjoy!! —
