Strawberry & Pistachio Neufchatel Spread

So you like cream cheese, especially the different flavors you can find on the store shelves, but you’re not particularly crazy about all the extra stuff that’s added in…..Well, I have something for you!! I saw this awesome little idea in one of my Breakfast & Brunch Cookbooks, but it was done with regular cream cheese. I swapped out the cream cheese with Neufchatel Cheese, added in a ½ cup of Fresh Chopped Strawberries, ½ cup of Pistachios (this combo was in original recipe) and it is quite amazing!. Now why do I think this will make a great addition to your breakfast, snack time or even a great option for your kiddos, because the flavor combination is quite endless. Not a fan of strawberries, try swapping with blueberries, raspberries, even pineapples or mango. Not particularly crazy about pistachios, try walnuts, pecans or even granola. If you need to sweeten it up, do it with a small drizzle of 100% Pure Maple Syrup or Honey. This is a 10-min quick fix that can add a whole lot of flavor to whatever you decide to spread it on. Ingredients
  • 8 oz Neufchatel Cheese
  • 83g (1/2 cup) Strawberries
  • 56g (1/2 cup) Pistachios
What You Need
  • Medium Bowl
  • Hand Mixer
  • Kitchen Mallet
  • Knife
Tips/Suggestions
  • Swap Strawberries with your favorite fruit of choice (Pineapples,Blueberries, Raspberries).
  • Swap Pistachios with other nuts (Pecans, Walnuts, etc) or granola.
  • If you desire a sweeter spread, drizzle in 100% Pure Maple Syrup or Honey.
Instruction
  1. Add Neufchatel Cheese to bowl, beat on medium with hand mixer.
  2. Chop your strawberries and add to bowl. Continue to beat on medium until combined.
  3. Coarsely chop pistachios and add to bowl, beat on low.
  4. Spread mixture on bagel, toast, or whatever you desire.
  5. Enjoy!!
