KFF Fit Kids Recipe: (Breakfast) Egg & Cheddar English Muffin, Strawberry Mango-Tango Greens Smoothie with a side of Mixed Berries.

This was a quick and easy breakfast prepared for the kiddos this morning (filling enough for all you fit foodies as well). This breakfast sandwich was prepared with a 100% Whole Wheat English Muffin, Eggs, Shredded Cheddar and drizzled with 100% Pure Maple Syrup. The meal was completed with a side of berries (Blackberries, Raspberries and Strawberries) and a delicious Strawberry & Mango Smoothie (will post smoothie recipe/ingredients separately). I know mornings move rather quickly and most parents want to provide a quick meal, but still keep it nourishing and filling. If that is you, this is a great option, because the entire meal took less than 10 minutes to prepare. I will also add that I didn’t even need to scramble the eggs, as I used my Nordic Ware English Muffin Microwave Egg Cooker (purchased at Target). You simply crack open the eggs, stick them in the microwave for under a min and you have perfectly cooked eggs to place on a sandwich.
