This is a great option to prep ahead of time and place in the refrigerator for a tasty after-school treat for your kiddos, or for you to enjoy throughout the day. This 3-Ingredients Banana Chia Pudding was topped with Blackberries & Raspberries, and completed with a dollop of Homemade Coconut Whipped (sweetened with a small amount of coconut sugar). Rich in fiber, delicious and nourishing…what more could you ask for in a snack or dessert?!

Ingredients
  • 1 Banana (113g)
  • 4tbs (52g) Chia Seeds
  • 1 cup Unsweetened Almond Coconut Milk
Whipped Coconut Cream
  • ⅓ cup (79g) Thai Kitchen Coconut Milk (Full Fat)
Topping
  • ½ cup Raspberries
  • ½ cup Blackberries
What You Need
  • Hand Blender
  • 2 Bowls
  • Blender or Whisk
  • Glass or Bowl for serving
Tips/Suggestions
  • To sweeten Chia Pudding, add 100% Pure Maple Syrup or Honey to taste.
Instruction
  1. Combine banana, chia seeds and milk in bowl. Use blender or whisk to combine ingredients.
  2. Place mixture in refrigerator, allow to set for a minimum of 15 minutes to overnight.
  3. (For Whipped Coconut Cream)Spoon out thick portion of coconut milk from can (leaving liquid), use hand blender to whip for 3-5 minutes. To sweeten, add ½-1tbs of Coconut Sugar, Stevia drops, or sweetener of choice.
  4. Layer chia pudding in glass or bowl. Top with berries and whipped coconut cream.
  5. Enjoy!!
