Maple Apple Cheddar Bacon Oatmeal Bake

I felt it was time to revisit old recipes and this one popped out at me. I can’t believe it has been an entire year since I last made this bake, seriously what in the world was I thinking….this has to be one of the best bakes in my recipe collection. When I made this recipe back in February (of 2013, yes that’s insane) I shared how I found myself in mid-bite thinking “Man, this is so good!” …well guess what, I was thinking the exact same thing this time around too. As I stated before, this bake is a great play on flavors…you have a hint of saltiness from the Bacon, than you have the sweetness from the Apples & Maple, topped with Cheese and it all just flows together. You definitely owe it to yourself to try this Oatmeal Bake at least once!!! Remember…’s quite alright to enjoy the Bacon, so no need to be alarmed…it’s all about Moderation!:-)

Dry Ingredients
  • 40g (1/2 cup) Quaker Whole Oats
  • ½ tsp Baking Powder
  • ¼ tsp Baking Soda
  • ½ tsp Cinnamon
  • ⅛ tsp Sea Salt
Wet Ingredients
  • 62g (2) Egg Whites
  • 38g Chobani Greek Yogurt
  • ¼ cup Silk Unsweetened Vanilla Almond Milk (or Blue Diamond Coconut Almond Breeze Milk)
  • ½ tsp Vanilla (I use Simply Organic)
  • 41g Chopped Apples
  • 15g (About two slices) Bacon
  • 21g (3tbs) Shredded Cheddar Cheese (or cheese of choice)
  • ½ tbs 100% Pure Maple Syrup
What You Need
  • 2 Bowls
  • Measuring Spoons
  • Skillet
  • Fork
  • Whisk or Large Fork
  • Knife
  • Spoon
  • Large Ramekin
  • Parchment Paper
  • Cooking Spray/Oil
  • Scale
  • Add less or more sweetener as you desire to your bake.
  1. Heat oven to 350 degrees. Heat Skillet and Cook Bacon. Chop into pieces and set aside.
  2. Combine all Dry Ingredients, set aside. Combine all Wet Ingredients in second bowl, add to dry mixture.
  3. Add chopped Apples to mixture, combine.
  4. Prepare large ramekin (Spray with cooking spray if you plan to eat right from ramekin. Place parchment paper on bottom of ramekin if you are removing).
  5. Pour mixture in ramekin. Top bake with crumble bacon and gently press down.
  6. Place in oven, bake for 40 minutes.
  7. Remove bake from oven. Drizzle maple syrup over bake, top with cheese and bake for additional 10 minutes (Instead of drizzling maple over bake at this step, you can save it to drizzle before consuming).
  8. Remove bake from oven and allow to set for five minutes. As bake cools, it will slightly firm up (Remember, it will be slightly moist in center).
  9. Enjoy!! Seriously.....ENJOY!!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
