Strawberry Banana Chia Pudding Parfait

I whipped up this little number for a midday snack for myself and as an after-school snack for the kiddos. Today, I tried something a little different with my Chia Pudding and used less Chia Seeds. Although the pudding still came out great, I personally prefer using more which results in a thicker pudding (I usually combine 1 cup of Almond/Coconut Milk, 4 tbs Chi Seeds, 1 Banana and sweeten). For the bottom layer, I added Frozen Strawberries to the processor to create a soft serve, the middle layer consisted of Banana Chia Pudding, and the parfaits were topped with crushed Brown Rice Cereal Puffs and a Strawberry…..simple and delicious!!

Chia Pudding Layer
  • 8 tbs Chia Seeds
  • 2 cups Unsweetened Almond Coconut Milk
  • 2 Bananas (Mashed)
Strawberry Layer
  • 2.5 cups of Frozen Strawberries
Crumb Layer
  • 2 cups Puff Brown Rice Cereal (Can use granola, toasted oats or other topping)
What You Need
  • Processor
  • Scale
  • Large Bowl
  • Spoon
  • 4 Glasses
  • Kitchen Mallet or Roller
  • Sandwich Bag
  1. Combined Chia Pudding ingredients and allow to set in refrigerator for minimum 15 minutes.
  2. Place Frozen Strawberries in processor and combine until it creates a soft serve.
  3. Place Rice Puffs in sandwich bag and gently crush.
  4. Layer parfait as you desire (Strawberries, Pudding, Rice Puffs, top with Strawberry)
  5. Enjoy!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
