Coconut Cream & Brownie Push Pop Parfaits

I shared a super easy and inexpensive way to show off your Valentine’s treats, and as promised, here is my final product! These delicious and perfectly portion Coconut Cream & Brownie Push Pop Parfaits were an excellent choice for the kiddos after-school snack (perfect for all you fit foodies too). They were so surprised and as you can imagined, enjoyed them with all smiles. This recipe actually took about 20 minutes to complete from start to finish, and this was the first time I gave Coconut Whip Cream a try (It definitely won’t be the last . Have you tried making your own whip cream, it is absolutely fantastic and a MUST TRY….so simple and all you need is Full Fat Coconut Milk, Sweetener of choice and a hand mixer…that’s it! The Push Pop Parfaits were completed with Bite-Sized Homemade Brownies and Strawberries. Enjoy!!

Brownie-Dry Ingredients
  • ½ cup (64g) KFF Flour Blend (Or use flour of choice such as Oat, Barley, Brown Rice, etc. You can find my flour blend recipe below in Tips)
  • 7 tbs (35g) Raw Cacao Powder or Hershey’s Chocolate or Dark Chocolate Powder
  • ¼ tsp Baking Powder (Preferably Gluten & Aluminum Free/Low Sodium)
  • ¼ tsp Baking Soda
  • ¼ tsp Sea Salt
Brownie-Wet Ingredients
  • 24 (Drops) Sweet Leaf Stevia Drops (Use more as needed or use desired sweetener)
  • ¼ cup + 2 tbs (90g) 100% Pure Maple Syrup
  • ¼ cup + 2 tbs (90g) Date Butter (See Tips for quick recipe)
  • 1 (50g) Large Egg
  • 1 (31g) Egg White
  • 1 tsp Vanilla Extract (I use Simply Organic)
Optional Brownie Add-Ins
  • 2-4 tbs Dark Chocolate Chunks/Chips (62-80% Dark Chocolate)
  • 2-4 tbs Pecans or Walnuts (Coarsely chopped)
Whipped Coconut Cream
  • 1 can Thai Kitchen Full Fat Coconut Milk
  • 2-4 (Drops) Sweet Leaf Stevia Drops (Optional)
  • Strawberries (Chopped)
What You Need
  • Wilton Treat Pops
  • Large Bowl
  • 2 Small Bowls
  • Wilton Mini Whoopie Pie Pan
  • Cooling Rack
  • Spoon
  • Scale
  • Whisk
  • Knife
  • Hand Mixer
  • Cooking Spray/Oil
  • KFF Baking Flour Blend (Makes 3 Cups): 128g Brown Rice Flour, 128g Oat Flour, 43g Tapioca Flour, 85g Potato Starch.
  • Date Butter: Boil 1 cup + ¼ cup water, pour over 227g Dates. Allow to set covered for 30 minutes, puree in blender.
  • Batter makes 24 Mini Whoopie Pies.
  • Place can of coconut milk in refrigerator before using.
  • For SWEETER Brownies, add Sweet Leaf Stevia Drops or replace Date Butter with an equal amount of 100% Pure Maple Syrup.
  1. Preheat oven to 350 degrees. Prepare pan with cooking spray.
  2. Combine all Brownie dry ingredients, set aside.
  3. Combine all wet ingredients. Add to bowl with dry ingredients and mix thoroughly. Add any add-ins (Chips/Chunks, Nuts).
  4. Bake for 10-11 minutes (Remember all ovens are not created equal).
  5. For Whipped Coconut Cream-Remove firm content that settles on top of coconut milk (stop when you reach the liquid portion, you only want the firm portion). Add Stevia drops if you desire, whip with hand mixer for 3-5 minutes. Place in refrigerator until ready to use.
  6. Chop fresh Strawberries.
  7. Assemble Parfait Treat Pops starting with a brownie layer, 5 grams of Whipped Coconut Cream, repeat twice and top with Fresh Strawberries.
  8. Enjoy!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
