Dark Chocolate Banana Oatmeal Bake

Looking for something to serve for Valentine’s breakfast, that’s wholesome and will fuel your early morning training session or kick start your kiddo’s day off right? How about these delicious Oatmeal Bakes!? Oatmeal Bakes are definitely a favorite around here and the chocolate/banana combo is superb, to make these a little extra special I poured the prepared batter in my heart shape cheesecake ramekins. You can find them at target, usually a set of three for under $10.00. This perfect breakfast was topped with Whipped Coconut Cream, Fresh Strawberries, and I even drizzled a bit of 100% Pure Maple Syrup before enjoying. The kiddos loves these bakes just as much as I do, I‘m sure these hearts won’t disappoint you! Enjoy!!

Dry Ingredients
  • 40g, ½ cup Whole Oats
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp cinnamon
  • ⅛ tsp salt (Just a light dash, not much needed)
  • 1 tbs (5g) Raw Cacao Powder or Hershey’s Chocolate or Dark Chocolate Powder
Wet Ingredients
  • 2-8 (Drops) Sweet Leaf Stevia Drops (Use more as needed or use desired sweetener)
  • 62g (2) egg whites
  • 75g Bananas (Mashed or Pureed)
  • ¼ cup Blue Diamond Unsweetened Almond Coconut Milk (Silk Almond milk can be used as well)
  • ½ tsp Vanilla (I use Simply Organic)
Whipped Coconut Cream
  • 1 can Thai Kitchen Full Fat Coconut Milk
  • 2-4 (Drops) Sweet Leaf Stevia Drops (Optional)
  • Strawberries (Chopped)
What You Need
  • 2 Bowls
  • Measuring Spoons
  • Whisk or Large Fork
  • Hand Mixer Knife
  • Spoon
  • Knife
  • Large Ramekin
  • Cooking Spray/Oil
  • Scale
  • 1 or 2 Heart Shaped Ramekins
  • Replace Bananas with other fruit for other variations.
  • Add less or more sweetener to your batter as you desire.
  • Top bake with 100% Pure Maple Syrup.
  • For Whipped Coconut Cream- Place can of coconut milk in refrigerator before using. Remove firm content that settles on top of coconut milk (stop when you reach the liquid portion, you only want the firm portion). Add Stevia drops if you desire, whip with hand mixer for 3-5 minutes. Place in refrigerator until ready to use.
  1. Preheat oven to 350 degrees. Spray Ramekin with cooking spray.
  2. Combine all Dry Ingredients in bowl, set aside.
  3. Combine all Wet Ingredients, add to Dry Ingredients and combine. Pour mixture in Ramekin.
  4. Place in oven, bake for 30-35 minutes (for two), bake for 45 minute if making one large bake.
  5. Remove Bake from oven, allow to set for a few minutes to cool and firm up slightly.
  6. Remove Bake from Ramekin, top with Whipped Coconut Cream and Strawberries.
  7. Enjoy!! (Remember this is a Bake, so it will be slightly moist in center).
