Chocolate Covered Heart Energizers

Well Hello my beautiful friends, did you miss me…because I surely did miss you!!! It’s been way too long and I knew it was time to come back with some great ideas, recipes and treats just for you….and what great timing…Tomorrow is #ParfaitTuesday! For this little number…why is it called a Heart Energizer..well only because it is filled with wholesome, energy boosting ingredients (Hemp Seeds, Dates, Coconut, PB and topped with Dark Chocolate). It’s been a long time since I used Protein Powder, but I gave Garden of Eden Vegan/Raw a try…not bad good people!! Enjoy!!

Ingredients
  • 4 tbs Earth Balance Natural Peanut Butter or Coconut Peanut Spread (Choose Natural Peanut Butter of choice)
  • 1 tbs Hemp Seeds (I use Manitoba Harvest Hemp Hearts – Can use up to 3tbs in this recipe)
  • 168g Medjool Dates
  • 23g Protein (I use Garden of Life Raw Protein)
  • ½ tsp Flavor Extract of Choice such as Orange, Vanilla, etc. (This is optional)
Optional Dark Chocolate Topping
  • 30g Dark Chocolate Bar or Chips (Lindt 62-80% Cacao/Dark Chocolate)
What You Need
  • Wilton Mini Heart Silicone Pan
  • Processor
  • Spoon
  • Scale
  • Cooking Spray/Oil
  • Small Bowl
Tips/Suggestions
  • Use protein of choice or swap with a flour substitute for non-protein version, such as almond meal, etc.
  • Use 1-3 tbs of Hemp Seeds, depending on how firm you would like your hearts. The more hemp seeds, the firmer they will be. I prefer using 2-3 tbs.
  • The addition of a flavor extract is a nice addition, but optional.
Instruction
  1. Place all ingredients in food processor, using spoon to scrape down sides.
  2. Lightly spray silicon pan with cooking spray.
  3. Evenly distribute mixture in heart cavities. Place in refrigerator 15-30 minutes to set.
  4. Place Chocolate Chip/Bar in small bowl, microwave for 30-45 seconds.
  5. Remove hearts from refrigerator, remove from silicon pan and top each with (5) grams of chocolate.
  6. Return hearts to refrigerator, allow chocolate to set 5-10 minutes.
  7. Enjoy!!
