Chocolate Cheesecake Banana PB Cream Parfait

This fabulous breakfast (for those of you that don’t want to admit that you have dessert for breakfast, we shall call it a snack or dessert) was my contribution to Parfait Tuesday. Although I enjoyed this solo parfait for breakfast, the kiddos enjoyed theirs as an afterschool snack (smaller versions) and it would be fair to say that it was thoroughly enjoyed, because I didn’t hear one sound. You know I love a meal or snack idea that contributes to me meeting my daily needs and also can be enjoyed by the entire family. Let’s talk about this parfait….The crust layer consists of Toasted oats sprinkled with Cinnamon and Stevia, the delicious Chocolate Cheesecake layer was prepared with Whipped Cottage Cheese/Neuchâtel Cheese/1 tbs melted Dark Chocolate Chips & 1 tbs Hershey’s 100% Cacao Dark Chocolate, and the Cream layer consists of melted Coconut PB/Bananas & Greek Yogurt. This parfait was completed with a generous topping of Cacao Nibs & Toasted Oats. Does this look great or what?!
