Sweet Potato & Sausage Breakfast Casserole

Enjoying a hearty breakfast casserole is a sure way to start your day, but topping it off with a Mexican flair creates one truly magnificent meal. This delicious casserole has multiple layers that will provide you with a complete and satisfying meal of turkey sausage, tomatoes, avocado, eggs, sweet potatoes, and cheddar cheese.  To give you that full southwest flavor, you can top this tasty casserole with fresh tomatoes or salsa and Greek yogurt.  Oh yeah….this was a good one!!

Ingredients
  • 330g Tomatoes
  • 300g Avocado
  • 450g Sweet Potatoes
  • 160g Onions
  • 1 Package Jennie-O Lean Turkey Sausage
Wet Ingredients
  • 6 Large Eggs
  • 300g Egg Whites (Equivalent to 6 Large Eggs)
  • 1 cup Silk Almond Milk (Unsweetened)
  • ½ Sea Salt
  • ¼ Pepper
Topping
  • 112g (1 cup) Shredded Cheddar Cheese (You can use fat free if you prefer)
Plate Options
  • Greek Yogurt
  • Salsa
  • Fresh Tomatoes
What You Need
  • Large Bowl
  • Skilled or Pan
  • Knife
  • 3qt Baking Dish
  • Processor or Grater
  • Spatula or Spoon
  • Measuring Spoons & Cups
  • Scale
  • Cooking Spray/Oil
Tips/Suggestions/Notes
  • You can swap out Lean Turkey Sausage for other sausages or protein sources.
  • Season your sausage layer more or less as you desire, get creative and add additional chopped veggies.
Instruction
  1. Preheat oven to 350 degrees. Prepare baking dish with cooking spray, set aside
  2. Slice tomatoes and avocado, set aside. Chop onions, set aside. Shred sweet potatoes with processor or grater, set aside.
  3. Cook turkey sausage as directed on packaging. Add onions, mix thoroughly with the turkey mixture.
  4. Mix all wet ingredients in large bowl, combine and add shredded sweet potatoes, set aside.
  5. Layer baking dish with turkey sausage mixture, then layer dish with sliced tomatoes. Continue to layer avocado slices and finally pour sweet potato/egg mixture over the casserole.
  6. Place the casserole in the oven and bake for 1 hour and 15 minutes, or until set.
  7. Remove casserole from oven and top with cheddar cheese, return to oven for an additional 3-5 minutes to allow cheese to melt.
  8. Remove from oven and allow to cool and set before cutting.
  9. Plate as you desire and top with Greek Yogurt, Salsa or Tomatoes.
  10. Enjoy!!
