Shredded Carrots & Turkey Casserole

Warm casseroles right from the oven are perfect on those cold winter evenings. This comfort-food casserole is prepared with Shredded Carrots and Leeks, and has a touch of creaminess from the Neufchatel Cheese. The added addition of Shredded Turkey Tenderloin makes this a complete one-dish meal.

Ingredients
  • 1.5 lb Turkey Tenderloin--Raw (Or chicken, shrimp, protein of choice)
  • 14g Brown Rice Flour
  • ¾ cup Silk Almond Milk (Unsweetened)
  • 8oz Carrots (Shredded)
  • 300g Leeks (Shredded, White Portion)
  • ½ tbs Minced Garlic (Jar)
  • 14.5 oz Low Sodium Chicken Broth
  • 4oz Neufchatel Cheese
  • 1 tbs Lemon Juice
  • ½ tsp Sea Salt
  • ½ tsp Pepper
  • ½ tsp Garlic Powder
  • 2 packages Seeds of Change Brown Rice & Quinoa Blend (You can use 2 packages from Big Ben or use 4 cups of cooked rice)

  • 2qt Baking Dish
  • Large Bowl
  • Whisk
  • Knife
  • Large Spoon
  • Large Skillet or Sauce Pan
  • Scale
  • Cooking Spray/Oil
Tips/Suggestions/Notes
  • Season with salt, pepper and other spices to achieve taste you desire. If not using a package rice blend, be sure to add more seasoning.
  • For a little heat, add 1-2 tsp of Hot Sauce or Pepper Sauce of choice.
  • Prep time does not include time taken to prepare turkey prior to making casserole.
Instruction
  1. Prepare Turkey Tenderloin (or protein of choice) as directed on packaging. Shred turkey and set aside.
  2. Prepare rice as listed on packaging, set aside.
  3. Preheat oven to 375 degrees. Spray baking dish with cooking spray, set aside.
  4. In a large bowl, combine brown rice flour and almond milk with whisk, set aside. Chop leeks, set aside.
  5. Heat skillet to medium and spray with cooking spray. Add leeks, carrots and garlic, cook 8-10 minutes.
  6. Add milk/flour mixture and chicken broth to the skillet, combine. Mixture will thicken and bubble, cook for addition 5 minutes.
  7. Add Neufchatel cheese, lemon juice, salt, pepper and garlic to the skillet. Cook for addition 5 minutes and turn off heat. Add shredded turkey tenderloin, combine all ingredients in skillet.
  8. Pour rice in baking dish, creating a layer. Pour vegetable turkey mixture over rice.
  9. Place in oven and bake for 20 minutes.
  10. Remove from oven and plate as you desire.
  11. Enjoy!!!

Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
