Parmesan Zucchini Mushroom Bites

Parmesan, mushrooms and zucchini creates a perfect bite size addition that could be enjoyed as a side dish or served as an appetizer with a dipping sauce.  Each tasty bite is loaded with veggies and is topped with a generous amount of Mozzarella, giving you that pizza feel.

Ingredients
  • 400g Zucchini (Shredded)
  • 36g Mushroom (Chopped)
  • 56g Brown Rice Flour (I use Bob’s Red Mill Brand)
  • 2 tbs Parmesan Cheese
  • ⅛ Sea salt
  • ⅛ Peppers
  • 1 Whole Large Egg
  • 50g Egg White (50g is equivalent to one Large Egg)
Topping
  • ½ cup Shredded Mozzarella Cheese (Can use Fat Free)
What You Need
  • Knife
  • Large Spoon
  • Muffin Tin
  • Scale
  • Cooking Spray/Oil
Tips/Suggestions
  • Season with salt, pepper and other spices to achieve taste you desire.
  • Swap out Shredded Mozzarella for Fat Free Shredded Mozzarella.
  • Served with a side of pizza sauce or salsa.
Instruction
  1. Preheat oven to 350 degrees. Spray muffin tin with cooking spray, set aside.
  2. Chopped Zucchini and mushrooms.
  3. Gently combine all ingredients (minus the eggs).
  4. Add eggs and continue to gently combine all the ingredients.
  5. Distribute evenly in muffin tin. Place in oven and bake for 30 minutes
  6. Remove bites from oven 3-5 minutes before cooking time ends, topped with mozzarella and return to oven to finish baking.
  7. Remove from oven, allow to cool. Plate as you desire or serve with dipping sauce.
  8. Enjoy!!!
