Sweet Potato Soufflé with Candied Walnuts

I know you’re probably finalizing your menus and getting ready for an awesome dinner, but just in case you are in need of one more sweet potato/side dish (HEY, there can never be enough Sweet Potatoes on the table) this comes from my list of FAVS.  This delicious soufflé has all the amazing flavors & spices of cinnamon, nutmeg, cloves and maple, than baked to perfection with the addition of Greek Yogurt and topped with Crushed Candied Walnuts.

  • 5lb, Sweet Potatoes
  • 2tbs Stevia In the Raw or Sugar In The Raw Turbinado Sugar (More can be used)
  • 1 tsp Cinnamon
  • ¼ tsp Nutmeg
  • ⅛ tsp Cloves
  • ½ tsp Sea Salt
  • ¼ cup 100% Pure Maple Syrup
  • 1 Large Egg
  • 50g Egg White (50g is equivalent to 1 Large Egg)
  • 1 ¼ cup (284g) Greek Yogurt (Chobani is my preference)
Crushed Candied Walnut Topping
  • 2 tsp 100% Pure Maple Syrup
  • 2oz (56g) Whole Walnuts (Can use Pecans)
  • Cinnamon
What You Need
  • Large Bowl
  • Hand Mixer
  • Large Spoon
  • Pan/Cookie Sheet (Parchment paper if desired)
  • 7x11 Baking Dish
  • Kitchen Mallet/Hammer
  • Potato Masher
  • Measuring Cups & Spoons
  • Scale
  • Cooking Spray/Oil
  • You can add more Stevia/Turbinado Sugar to your liking. Taste your mixture.
  • Just as the sweetener, you can adjust your spices if you like.
  • I opted to use Turbinado Sugar for this recipe for a brown sugar taste.
  1. (For Potatoes) Preheat oven to 400 degrees, place sweet potatoes on pan and bake for 1 hr until soft.
  2. Remove potatoes from oven, allow to cool and remove skin. Place in large bowl.
  3. (For Crushed Candied Walnut Topping) Drizzle maple syrup over walnuts and sprinkle with cinnamon. Bake for 5-10 minutes.
  4. (Prepare Souffle) Lower oven to 350 degrees.
  5. Add all remaining ingredients to the bowl (not topping). Combine mixture using the large spoon, you can use the hand mixer for a thorough blend.
  6. Spray baking dish with cooking spray, pour mixture into dish. Bake for 45 minutes.
  7. Crush walnuts with mallet. Sprinkle over soufflé and bake for an additional five minutes.
  8. Enjoy!!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
