Roasted Peppers & Strawberry Zucchini Salad

This delicious and refreshing salad was prepared with Harvest Grains Blend, Roasted Peppers, a generous amount of fresh chopped Scallions, Purple Onions, Zucchini and Sweet Strawberries. If you’re not in the mood for a meatless dish, simply add chicken, shrimp or your favorite protein of choice.

Ingredients
  • 45g (1 Serving) Trader Joe’s Harvest Grains Blend
  • Low Sodium Vegetable or Chicken Broth (Replace amount of liquid listed on package with Broth)
  • 150g Zucchini Squash
  • 50g Chopped Strawberries
  • 25g Yellow Bell Pepper
  • 25g Green Bell Pepper
  • 25g Red Bell Pepper
  • 17g Scallions
  • 25g Sweet Purple Onions
Dressing Ingredients
  • 1-2 tbs Vinaigrette Dressing of Choice
  • 1-2 tbs Lemon Juice (Use equal parts of Dressing & Lemon Juice)
What You Need
  • Knife
  • Pot w/Lid
  • Large Spoon
  • Large Bowl
  • Cookie Sheet
  • Parchment Paper (Optional)
  • Vegetable Spiralizer or Mandoline Slicer
  • Bowl
  • Scale
Tips/Suggestions
  • Use your favorite store brand Vinaigrette Dressing or make your own.
  • Swap out the Harvest Grains Blend for your favorite grains or blends.
  • Add protein of choice (Chicken, Shrimp, etc) to make this a complete meal.
Instruction
  1. Preheat oven to 400 degrees. Clean and cut your bell peppers, place them on the cookie sheet and place in oven for 15-20 minutes (adjust time to reach your desired doneness).
  2. Use the spiralizer or mandolin to cut zucchini, place in bowl.
  3. Follow directions on Harvest Grains Blend package to prepare in pot.
  4. Place grains, chopped strawberries, peppers and dressing ingredients in bowl. Gently combine and place over zucchini.
  5. Enjoy!!
