Banana Strawberry Mini Oat Cups

These mini Oat Cups are not quite a muffin, but more of an Oatmeal Bake that‘s versatile, quick and easy to make. Normally they are prepared much larger (a batch of 8), but the mini versions are a great option to have for the little hands (the kiddoes love these Oat Cups in our house).

Ingredients
Dry Ingredients
  • 120g (1.5 cup) Quick Oats (You can use Whole Oats, but it will change the texture)
  • 1 tsp Baking Powder (Preferably Gluten & Aluminum Free/Low Sodium)
  • ½ tsp Baking Soda
  • 1 tsp Cinnamon
  • 1-2 tbs Stevia in the Raw (Optional or use Sweetener of Choice, Use more or less as you desire)
Wet Ingredients
  • 225g Bananas (Mashed/Pureed)
  • ¼ cup Blue Diamond Unsweetened Almond Coconut Milk (Silk Almond Milk can be used as well)
  • 50g Egg White or 1 Whole Egg (50g is equivalent to 1 Large Whole Egg)
  • ½ tsp Vanilla (I use Simply Organic Vanilla)
Fruit Topping
  • 40-50g Sliced Strawberries
What You Need
  • Large Bowl
  • Small Bowl
  • Strainer
  • Knife
  • Large Spoon or Whisk
  • Measuring Cups & Spoons
  • Scale
  • Muffin Pan
  • Cooking Spray/Oil
Tips/Suggestions
  • Us e your favorite fruit in place of the strawberry slices.
  • Drizzle with 100% Pure Maple Syrup.
  • You can make larger or smaller cups as you desire, this will change the nutrition facts listed.
Instruction
  1. Preheat oven to 375 degrees. Prepare muffin pan with cooking spray and set aside.
  2. Combine all Dry Ingredients, set aside.
  3. Combine all Wet Ingredients. Add wet mixture to Dry Ingredients and combine.
  4. Slice your strawberries.
  5. Evenly distribute mixture in muffin pan (I prefer to make 8 larger cups, however this picture is of 12 mini cups).
  6. Place one strawberry on top of each cup.
  7. Place in oven and bake for 30 minutes.
  8. Remove from oven and plate as you desire.
  9. Enjoy!!

Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
