Chunky Monkey Protein Oat Bars

I love the combination that makes up Chunk Monkey Ice Cream by Ben & Jerry’s and this delicious, wholesome bar is filled with all those amazing flavors! With Dark Chocolate, Shredded Coconut, Nuts and Bananas, what more could you ask for?!

Dry Ingredients
  • 84g Dymatize Elite XT Rich Vanilla Protein Powder (Use a protein w/a blend of Casein & Whey for best results)
  • 120g Quaker Oats (Old Fashioned Oatmeal)
  • 45g (3tbs) Mini Dark Chocolate Chips
  • 40g (1/2 cup) Unsweetened Shredded Coconut
  • 28g Chopped Almonds (or Nuts of Choice--Walnuts, Pecans, etc)
  • 2 tbs Stevia in the Raw (or use Sweetener of Choice)
  • ½ tsp Baking Soda
Wet Ingredients
  • 83g (1/3 cup) Egg Whites
  • 113g Bananas (Puréed/Mashed)
  • 113g Greek Yogurt
  • ¼ cup Blue Diamond Unsweetened Almond Coconut Milk (Silk Almond milk can be used as well)
  • 1 tbs Vanilla (I use Simply Organic Vanilla)
  • 2 tbs 100% Pure Maple Syrup
Light Ganache
  • 40g (1/2 cup) Hershey’s 100% Cacao Special Dark Chocolate
  • 126g (1/2 cup) No Sugar Added (Unsweetened) Apple Sauce
  • 1 tsp Coconut Oil
  • 2 tbs Stevia in the Raw (or use Sweetener of Choice)
Additional Topping
  • ½ - 1 tsp Unsweetened Shredded Coconut
What You Need
  • 1 Large Bowl
  • 1 Small Bowl
  • Whisk
  • Large Spoon
  • Measuring Spoons & Cups
  • Cooking Spray/Oil
  • Parchment Paper (Use for easy removal)
  • 8x8 Brownie Pan
  • Processor
  • Scale
  • Don’t be afraid of using Dark Chocolate Chips in this recipe. Remember the darker the chocolate (higher percentage of cacao), the lesser amount of sugar will be added to your recipe.
  • Add more or less sweetener to your Bar Batter and Light Ganache as you desire, be sure to taste it.
  • You can lower macros by adding less Shredded Coconut and Chocolate Chips to your batter, this will slightly alter outcome and texture.
  • Macros/Nutrition Facts are for (8) bars, you can cut larger or smaller bars as you desire.
  1. Preheat oven to 350 degrees. Prepare Brownie Pan with parchment paper and spray.
  2. Combine Dry Ingredients in large bowl, mix.
  3. Combine all Wet Ingredients in small bowl, mix thoroughly.
  4. Add Wet Ingredients to Dry Ingredients, combine.
  5. Pour batter in pan and smooth out. Bake for 20-21 minutes (Remember, all ovens are not created equal).
  6. Remove from oven; allow to cool in pan for 5 minutes. Move to wire cooling rack or plate.
  7. Prepare Light Ganache. Add all ingredients to processor and combine.
  8. Evenly distribute Light Ganache over Bars, sprinkle with Shredded Coconut.
  9. Place in refrigerator for at least 30 minutes to allow Ganache to set before cutting.
  10. Enjoy
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.
