Waffles + Pumpkin + Cream Cheese + Maple equals total perfection! These delicious Pumpkin waffles are thick, fluffy with a slight crisp and filled with pumpkin spices.  These Beautiful & Delicious waffles creates the most perfect breakfast on those wonderful Fall mornings.

Ingredients
Dry Ingredients
  • 42g, Brown Rice Flour (I use Bob’s Red Mill Brand)
  • 42g, Oat Flour (I use Bob’s Red Mill Brand)
  • 1.5 tsp Baking Powder (Preferably Gluten & Aluminum Free/Low Sodium)
  • ⅛ Sea Salt
  • 1-2 tbs Stevia in the Raw (or use Sweetener of Choice)
  • ½ tsp cinnamon
  • ¼ tsp Nutmeg
  • ¼ tsp Ginger
  • ¼ tsp Allspice
Wet Ingredients
  • 62g (2) Egg Whites
  • 122g Canned Pumpkin(or Roasted Pumpkin)
  • ½ cup Blue Diamond Unsweetened Almond Coconut Milk (Silk Almond milk can be used as well)
  • ½ tsp Vanilla (I use Simply Organic Vanilla)
Pumpkin Maple Cream Cheese Cream Syrup
  • 28g Fat Free Cream Cheese
  • 28g Canned Pumpkin
  • 1 tbs 100% Pure Maple Syrup
  • 1-2 tbs Blue Diamond Unsweetened Almond Coconut Milk (Silk Almond milk can be used as well)
  • **Use less or more milk to reach desired consistency**
What you need
  • 2 Bowls
  • Small Bowl
  • Waffle Iron
  • Measuring Spoons
  • Whisk or Large Fork
  • Hand Mixer
  • Spoon or Measuring Cup (To pour Batter)
  • Cooking Spray/Oil
  • Scale
Tips/Suggestions
  • Waffle Batter is thick, you can add more Milk for a thinner Batter if you desire.
  • Rice Whip was purchased as Whole Foods.
  • Add less or more sweetener to your batter as you desire.
  • Macros/Nutrition Facts is for half the batter, recipe makes 2 servings.
Instruction
  1. Heat Waffle Iron.
  2. For regular Waffles, combine all Wet Ingredients and set aside. For fluffy Waffles, place egg whites in a bowl and beat with hand mixer until soft peaks are formed. Combine remaining wet ingredients and set aside.
  3. Combine all Dry Ingredients. Add Wet Ingredients to bowl and combine.
  4. Spray Waffle Iron.
  5. Pour batter into iron. Allow to fully cook.
  6. Add Pumpkin Maple Cream Cheese Cream Syrup Ingredients to a small bowl, combine with hand mixer. Heat if you desire.
  7. Remove Waffles from waffle iron and plate/add toppings as you desire.
  8. Enjoy!!
