Are you in need of a savory breakfast idea? If so, this all edible Shredded Pumpkin bowl is a must try!!
  • 114g Shredded Pumpkin (or Sweet/White Potatoes)
  • 31g (1) Egg White
  • 31g (1) Egg White
  • 50g (1) Whole Egg
  • 56g (2oz) Jennie-O Lean Ground Turkey Sausage
  • 20g Tomatoes
  • 20g Green Bell Pepper
  • 20g Onions
  • 20g Mushrooms
  • 20g Jalapeno
  • 25g Avocado
  • Fresh Cilantro
What You Need
  • Ramekin
  • Whisk or Large Fork
  • Spoon or Spatula
  • Cake Spatula or Knife
  • 1 Medium Bowl
  • Cooking Spray/Oil
  • Parchment or Wax Paper
  • Scale
  • Food Processor (w/Shredder option) or Grater
Other Options For Filling
  • Bacon
  • Turkey Bacon
  • Sun Dried Tomatoes
  • Leeks
  • Broccoli
  • Zucchini
  • Shredded Cheese
  • Top with 100% Pure Maple Syrup
  • Add your favorite additions to the fillings
  1. Preheat oven to 375 degrees. Prepare Pumpkin or Sweet Potatoes with grater or processor. Prepare ramekin with spray, cut a piece of parchment or wax paper and add to bottom of ramekin (this is for easy removal).
  2. Combine (1) Egg White and Shredded Pumpkin in bowl. You can season Shredded Pumpkin Mixture as you desire.
  3. Place Shredded Pumpkin Mixture in ramekin and mold to sides, forming a bowl. Bake for 30-35 minutes.
  4. Scramble Eggs, set aside.
  5. Sauté Turkey with Onions, Mushrooms and Peppers. Set aside.
  6. Gently combine remaining Filling Ingredients with Turkey Mixture and Eggs, set aside.
  7. Remove ramekin from oven, allow to cool (This will make it easier to remove). Use a cake spatula or knife to gently loosen bowl from ramekin.
  8. Plate Pumpkin Bowl and add filling.
  9. Enjoy!!
