Delicious Carrot Cake in one Wholesome Cookie!
Dry Ingredients
  • 80g cup Quick Oats
  • 113g Oat Flour (I use Bob's Red Mill Brand)
  • 4 tbs Stevia in the Raw (or use Sweetener of Choice)
  • 1 tsp Baking Powder (Preferably Gluten & Aluminum Free/Low Sodium)
  • ¼ tsp Baking Soda
  • ¼ tsp Sea Salt
  • 1 tsp Cinnamon
Wet Ingredients
  • 126g No Sugar Added (Unsweetened) Apple Sauce
  • 1 tsp Vanilla (I use simply Organic Vanilla)
  • 50g Egg White or Egg of choice (50g is average size of 1 Large Whole Egg)
  • 40g Golden Raisins
  • 64g Shredded Carrots
  • 28g Pecans (Coarsely Chopped)
Cream Cheese Protein Frosting
  • 56g Greek Yogurt (Chobani is my favorite)
  • 56g Fat Free Cream Cheese
  • 14g Vanilla Protein Powder (I use Dymatize Elite XT to sweeten and thicken frosting, you can sweeten as you desire)
  • Refrigerate until ready to use.
What You Need
  • Scale
  • 2 Large Bowls
  • Small Bowl
  • Large Spoon or Whisk
  • Measuring Spoons & Cups
  • Cooking Spray/Oil
  • Ice cream scooper/Cookie drop
  • Parchment Paper
  • Cookie Sheet
  • Large Freezer Bag or Pastry Bag/Scissors (Optional)
  • Roll soft cookie dough into balls and gently press down with your fingers on cookie sheet (shaping them); this creates a round uniform look.
  • (If you don’t have a Pastry Bag) Use Large Freezer Bag, cut one corner and distribute frosting evenly over cookies.
  • (Optional) 100% Maple Syrup is in the ingredients picture, but was not used in this recipe. Maple is optional to use as a sweetener in place of the Stevia.
  • Frost your cookies as you desire, completely cover or drizzle. Feel free to add additional toppings (Chopped Pecans, Carrots, Raisins, Etc).
  1. Preheat oven to 350 degrees and prepare cookie sheet with Parchment Paper and Spray.
  2. Combine all Dry ingredients. Set aside.
  3. Combine all Wet ingredients. Combine Dry ingredients with Wet ingredients. Gently fold in Add-Ins.
  4. Drop cookie batter by desired size onto prepared Cookie Sheet. (I make 18 cookies per batch)
  5. Bake for 10-12 minutes (All ovens are not created equal).
  6. Remove from oven; allow to cool on wire rack or plate.
  7. Frost cookies as you desire.
  8. Enjoy!!
Remember, you can always adjust recipe to smaller or larger portions to meet your needs and goals.

  1. Is it a must with using apple sauce?

    • Hi Bellini!

      I use Applesauce as a replacement for Oil in my recipes. You can definitely try other options, other fruit, etc., but I can not guarantee the outcome. I have only made this recipe with Applesauce, but I would love to hear how they turn out if you choose something else.
